Got this recipe from Guy's Big Bite. One of the best I've had. I didn't have baguette so I use a ciabata. Just as good.

1 red onion, finely chopped
1/2 cup parsley, finely chopped

1 pinch salt
1 tablespoon olive oil
1 avocado, mashed until smooth
4 slices sourdough bread, 1/2 inch thick Toasted

  • Spread Avocado on toasted sourdough.
  • Spoon on tomato mix, sprinkle over remaining parsley, and finish with a drizzle of olive oil.

Tips:

  • Choose the right bread: A good sourdough bread is essential for bruschetta. Look for a loaf that is slightly chewy and has a nice tang. You can also use a baguette or ciabatta bread.
  • Toast the bread properly: Toasting the bread is what gives bruschetta its signature crispy texture. Be sure to toast the bread until it is golden brown and slightly charred.
  • Use fresh, high-quality ingredients: The best bruschetta is made with fresh, seasonal ingredients. Use ripe tomatoes, basil, and olive oil. You can also add other toppings like grilled vegetables, cheese, or cured meats.
  • Don't overcrowd the bread: When assembling your bruschetta, don't overcrowd the bread with toppings. You want each bite to have a good balance of flavors and textures.
  • Drizzle with olive oil: Before serving, drizzle your bruschetta with a little olive oil. This will help to keep the bread moist and flavorful.
