SOUTHERN ICED TEA COCKTAIL

I'm so smitten with the new craze of serving desserts, drinks, salads or whatever comes to mind in Mason jars. This is a good one from Deep Dish South blog. She said it's a cross between a Long Island Iced Tea and an Arnold Palmer. Naturally, she suggests to serve this in a what? Yes, a Mason jar!

Time 40m

Number Of Ingredients 7

9 lipton tea bags, or tea of choice
3 cups water
1/8 tsp. baking soda
2 cups sugar
water to fill
fresh lemon wedges, optional
fresh mint sprigs, optional

Steps:

  • 1. In 4-cup micro-safe measuring cup with pour spout (such as Pyrex), heat 3 cups water to boiling in microwave on high. (My microwave takes 5 minutes.) Add baking soda and stir in. *Make sure your water has stopped bubbling before adding or it can bubble over. Add tea bags, holding the strings and tabs, and poke down till all are covered as best you can. Lay tabs over side of glass and place plate or lid on top. Steep for 30 minutes. Remove tea bags to plate. Add 2 cups sugar to measuring cup of tea concentrate. Stir til fully dissolved. 1-2 minutes. **If using a glass pitcher, fill pitcher halfway with cold water, then add tea concentrate, then fill rest of the way full with more cold water. (This prevents your pitcher from breaking from the hot tea!) Place pitcher in refridgerator to chill. Serve over ice with fresh lemon wedges and mint sprigs if desired. Makes a perfect pitcher every time! Enjoy!

REAL SOUTHERN ICED TEA

This is for my "Southern to the Core" cookbook series. Feel free to offer your suggestions in the comments. I find Luzianne brand tea to be used frequently in the south, but you can substitute any brand of good quality tea.

Time 10m

Number Of Ingredients 6

1 qt rapidly boilng water
3/4 c granulated sugar
4 qt size tea bags
3 c cold water
ice cubes
lemon slices, mint leaves (optional)

Steps:

  • 1. In a saucepan, stir sugar into the 1 quart boiling water until completely dissolved. Remove from heat and place tea bags into this sugar syrup mixture. Allow to steep 5-7 minutes.
  • 2. Pour cold water and about 2 cups of ice cubes into a 2 1/2 quart serving pitcher. SLOWLY pour hot tea mixture into the cold water. Stir until ice melts and add lemon slices or mint leaves if desired. Serve in tall glasses over ice cubes.
  • 3. All tastes are different. People like sweet tea made with as little as 1/2 cup of sugar, up to a cup and a half - we prefer 3/4 to 1 cup sugar per half gallon. Try different mixtures and make it your own.

Tips:

  • Choose the Right Tea: Use high-quality, loose-leaf black tea for the best flavor. Look for teas labeled "Southern style" or "iced tea blend."
  • Steep the Tea Properly: Bring water to a boil, then remove from heat and add tea leaves. Steep for 3-5 minutes, depending on the desired strength.
  • Sweeten to Taste: Add sugar or other sweetener to taste. Simple syrup is a popular choice, as it dissolves easily and provides a smooth, consistent sweetness.
  • Chill Thoroughly: Let the tea cool to room temperature, then refrigerate until well chilled. You can also pour the tea over ice to chill it quickly.
  • Garnish and Serve: Garnish with lemon slices, mint sprigs, or fresh fruit. Serve over ice with a straw.

Conclusion:

Southern iced tea is a refreshing and flavorful beverage that is perfect for enjoying on a hot summer day. With its simple ingredients and easy-to-follow instructions, this classic recipe is sure to become a favorite. Experiment with different types of tea and sweeteners to create your own unique version. Whether you prefer it sweet or unsweetened, Southern iced tea is a delicious and refreshing drink that is sure to please everyone.
