easy, healthy, and tastes great! i marinated this overnight so that it would be extra flavorful, but I'm sure it'd be just as good if dumped in crock pot in the morning. this is a fun recipe to play with. you can make it as mild or spicy as you'd like. i prefer really spicy but the rest of my family doesn't. i add extra jalapenos on my plate!

4 boneless skinless chicken breasts, cubed
1 (26 ounce) jar chunky salsa
2 minced garlic cloves
4 chopped green onions
5 tablespoons taco sauce
6 tablespoons lime juice (or juice 2-3 limes)
3 slices jarred jalapenos
cooked brown rice

Steps:

  • combine all ingredients and marinate in fridge overnight. cook in crock pot on low 8-10 hours. serve over steamed brown rice.

This is an extremely easy BBQ Chicken meal done in the crockpot. I use the chicken tenderloins if I can find them. Use the jalapenos at taste, I like spicy things. Enjoy!

1 lb boneless skinless chicken breast, cut into 1-inch-wide strips (thawed)
salt
cracked black pepper
1 tablespoon diced jalapeno
1 (18 ounce) jar hickory flavored barbecue sauce
1 (18 ounce) jar mustard based barbecue sauce
1 tablespoon extra virgin olive oil
Pam cooking spray
1 cup white rice

Steps:

  • Spray baking dish with Pam, rub EVO over chicken and sprinkle with salt and pepper.
  • Bake at 350 for 15 minutes.
  • While chicken is baking, combine both BBQ sauces and jalapenos in crockpot. I usually use one tablespoon of jalapenos.
  • Once chicken has cooked 15 minutes, place in crockpot and stir.
