1 15.25 ounce box Pillsbury Traditional Yellow Cake Mix
1 3.5 ounce box French Vanilla Instant Pudding and Pie Filling
3 eggs
1 1/4 cups fresh or regular orange juice from carton
1 stick or 1/2 cup or 8 tablespoons butter (melted)
1 teaspoon orange or vanilla extract
1 tablespoon orange zest
3/4 cup powdered sugar
3 tablespoons milk
1 to 2 tablespoons orange zest

Steps:

  • Combine cake mix, pudding mix, eggs, orange juice, butter and extract and mix on medium with mixer. Fold in orange zest and mix with spoon. Batter will be thick.
  • Spray a 10 inch bundt pan with cooking spray generously. Bake in preheated 350 degree oven for 45 to 50 minutes until center is done when tested. Cool about 10 minutes in pan. Remove and let cool completely.

1 (15.25 ounce) Duncan Hines Classic Butter Golden Cake Mix
3/4 cup cooking oil (I use Canola oil)
4 eggs
1 (15 ounce) can mandarin oranges, undrained (Save several of the orange sections to decorate the top of your cake)
Frosting Ingredients
1 (3.4 ounce) box instant vanilla pudding
2 (8 ounce) cans crushed pineapple, undrained
1 (8 ounce) container Cool Whip, thawed

Steps:

  • You DO NOT make the cake according to the directions on the cake mix. You use the directions here.
  • In a large mixing bowl mix all the cake ingredients listed above until well blended. Spray 3 (9 inch) round cake pans with cooking spray. Fill each cake pan with about 2 cups of cake mix. Bake in preheated 350 degree oven for 20 to 25 minutes checking for doneness as ovens vary. Your layers will be thin. Remove from oven and let cool.

FILLING:
6 large egg yolks
1 cup sugar
1/2 cup butter, cubed
1/4 cup bourbon
1 tablespoon grated orange zest
1/4 teaspoon salt
3/4 cup raisins
3/4 cup sweetened shredded coconut
3/4 cup chopped pecans
3/4 cup coarsely chopped red candied cherries
1 cup heavy whipping cream, whipped and sweetened

Steps:

  • Line bottoms of 3 greased 9-in. round baking pans with parchment. Grease parchment; set aside. Place egg whites in a large bowl; let stand at room temperature 30 minutes., In another large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Beat egg whites until stiff peaks form; fold into batter. Transfer to prepared pans., Bake at 325° until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool for 10 minutes before removing from pans to wire racks; remove paper. This is my most favorite cake and the one that's most often requested at my house. I have been making this cake for years and I follow the recipe exactly as it's written. I have never in all those years had this cake turn out soggy. True, it is a MOIST cake, but if made as written, should not be soggy.

This is a very light, moist cake....great for summer. The recipe came from Southern Lady magazine. I baked one last night to take to Sunday School this morning....4 pieces are already gone and we haven't left the house yet. Make this one a day before you need it....it's better the second day. If you can't find an orange cake mix, use white or yellow and increase the extract to 1 tsp. You can also use more mandarin oranges if you like.
