PECAN CRUSTED CATFISH
This recipe comes from the Dec 2009 issue of Woman's Day. It is an easy version of one of my favorite Southern Living Recipes that uses catfish. I think other varieties of fish would work well in this recipe as well as catfish - salmon, tilatipa and others.

PECAN CRUSTED DIJON BAKED CATFISH
Simple, delicious alternative to frying catfish southern style. I was dubious about the mixture of pecans and Dijon, but it worked and produced a slightly tangy, crusty finish to the fish. If you've never tried catfish, it is a real treat. The least "fishy" fish I've ever had. My fillets were huge, so I made 1 1/2 times the topping mixture. From Southern Church Suppers

SAUTEED CATFISH FILLETS WITH PECAN BUTTER SAUCE
Steps:
- Have ready in separate shallow dishes the flour, and the egg beaten with the water. Dredge each catfish fillet in the flour, shaking off the excess, dip it in the egg mixture, letting the excess drip off, and dredge it in the flour again, shaking off the excess. Transfer the fish as it is coated to a wax paper-lined baking sheet. In a large skillet heat 2 tablespoons of the oil over moderately high heat until it is hot but not smoking and in it sauté the fish in batches, adding the remaining oil as necessary, for 2 to 3 minutes on each side, or until it just flakes. Transfer the fish to paper towels to drain and keep it warm, covered.
- In a skillet cook the onion and the garlic in the butter over moderately low heat, stirring, until they are softened, add the pecans, and cook the mixture over moderately high heat, swirling the skillet, until the butter is browned and the pecans are toasted well. Stir in the lemon juice, the Tabasco, and salt and pepper to taste. Divide the fish among 6 heated plates, spoon the butter sauce over it, and garnish each serving with a lemon wedge.
Tips:
- Choose the Right Catfish: Opt for fresh or frozen catfish fillets that are firm and have a mild, sweet flavor. Avoid fillets that are slimy or have a strong fishy odor.
- Use a Quality Breadcrumb Mixture: For a crispy coating, combine panko breadcrumbs with grated Parmesan cheese, chopped pecans, and a blend of herbs and spices.
- Season the Catfish Well: Before breading, season the catfish fillets with salt, pepper, and paprika to enhance their flavor.
- Don't Overcrowd the Pan: When frying the catfish, avoid overcrowding the pan to ensure even cooking and prevent the coating from becoming soggy.
- Serve with Your Favorite Sides: Southern pecan catfish pairs well with classic sides like hush puppies, coleslaw, and tartar sauce. You can also serve it with roasted vegetables, mashed potatoes, or a simple green salad.
Conclusion:
Southern pecan catfish is an easy-to-make yet flavorful dish that combines the delicate taste of catfish with a crunchy pecan crust. By following these tips, you can create a delicious and satisfying meal that's perfect for a casual family dinner or a special occasion.
