3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
16 tablespoons butter, at room temperature, plus
additional butter, for the baking pan
2 cups sugar
4 large eggs
2 1/2 lbs sweet potatoes, cooked, mashed and cooled (yield 2 1/2 cups)
1 teaspoon vanilla extract
4 ounces chopped pecans
1/2 cup sweetened flaked coconut (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Generously butter a 10-cup tube or bundt pan.
  • In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  • Set aside.
  • In a large bowl with an electric mixer on medium speed, beat the butter until light and fluffy.
  • Add the sugar gradually, about 1/2 cup at a time, beating well after each addition.
  • Add the eggs, 1 at a time, beating well after each addition.
  • Add the sweet potatoes and mix until thoroughly combined.
  • Reduce the speed to low or switch to a wooden spoon and gradually add the flour mixture to the creamed mixture in 3 additions, beating well after each addition.
  • The batter should be stiff.
  • Add the vanilla, pecans and, if desired, the coconut.
  • Spoon the batter into the prepared pan.
  • Bake until the cake tests done when a wire cake tester is inserted in the middle and comes out clean, 50 to 65 minutes.
  • Transfer the pan to a wire rack to cool for 15 minutes.
  • Invert the cake onto a plate and remove.
  • Note: To cook sweet potatoes, peel and quarter potatoes, add to boiling water and simmer, uncovered, until tender, about 20 minutes, depending on size- Drain and mash.

She used to make this for all the church and school bazaars and it was the first to go. I made it for my school bazaar and got many requests for the recipe. My mother is a southern cook from those bygone years where everyone knew by heart the recipe for a good pound cake. This is hers.

3 cups sugar
3 cups sifted cake flour
1/4 teaspoon baking soda
6 large eggs
1 (8 ounce) carton sour cream
1 teaspoon vanilla extract

Steps:

  • Beat butter at medium speed with an electric mixer (not a hand held one) about 2 minutes or until creamy. Gradually add sugar, beating at medium speed 5 to 7 minutes. Combine cake flour and baking soda, and add to butter mixture 1 cup at a time. (Batter will be extremely thick).
  • Separate eggs; add yolks to batter, and mix well. Stir in sour cream and vanilla. Beat egg whites until stiff, and fold into batter.
  • Spoon into a greased and floured 12-cup Bundt or 10-inch tube pan. Bake at 300F for 2 hours or until a wooden pick inserted in the center comes out clean. (You may also spoon batter into two 9- x 5- x 3-inch loaf pans; bake at 300F for 1 1/2 hours or until a wooden pick inserted in center comes out clean). Cool in pan on wire rack 10 to 15 minutes. Remove from pan; cool completely on wire rack.
  • NOTE: Standard Mixing Method: If you are using a handheld mixer or prefer a conventional pound cake method, here's the procedure we suggest.
  • Beat butter at medium speed with an electric mixer about 2 minutes or until creamy. Gradually add 3 cups sugar, beating at medium speed 5 to 7 minutes. Add eggs, one at a time, beating just until yellow disappears.
  • Combine cake flour and baking soda; add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Mix at lowest speed just until mixture is blended after each addition. Stir in vanilla. Bake as directed.

Steps:

  • Cream butter and Crisco.

  • Alternate milk and 1 tsp all flavorings w/sifted dry ingredients. Pour into a greased and floured 10" tube pan.
  • Bake 325° for 1 ½ hours or until cake tests done or depending on oven.
  • Dissolve glaze ingredients over low heat in a saucepan. Spoon glaze over cake in pan while hot. Let cool in pan. Keep well and it is better after 1st day.
  • NOTE: Put out the butter, Crisco and eggs the night before. The key is that everything is room temperature and you beat the butter, sugar and eggs at least the 10 minutes. After that you only beat enough to mix the dry ingredients.

3 c sifted all purpose flour
1/2 tsp salt
1/4 tsp baking soda
1 c butter
3 c sugar
6 eggs
1 tsp vanilla
1 c sour cream
GLAZE
1 c powdered sugar
3 Tbsp orange juice
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 300 degrees F (150 degrees C). Grease and flour a 10 inch Bundt or tube pan. Sprinkle pecans on bottom of pan; set aside. Sift together flour, salt, and baking soda into a medium bowl; set aside. In a large bowl, cream butter and white sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Add flour mixture alternately with sour cream. Pour batter over pecans in prepared pan.

1 lb. butter
3 cups sugar
1 Tbsp vanilla extract
4 cups cake flour (do not use self-rising)
pinch salt
10 extra large eggs
A PRIZE WINNING POUND CAKE!
2 lemons-for glaze
2 cups powered sugar, sifted
thoroughly - squeeze lemons, mix with powdered sugar, drizzle over hot cake, still in the tube pan

Steps:

  • 1. Cut butter into small pieces and cream with the sugar. Add the ten eggs, beaten slightly, a little at a time. Add the vanilla extract. (Substitute vanilla with almond, if you like.)
  • 2. Add the salt to the flour. using a sturdy mixer, add the cake flour to the wet mixture. Prepare your separating tube pan with Crisco/flour or baking spray which is cleaner. (Be liberal in preparing the pan.)Lump the thick batter evenly into the pan.
  • 3. Use real butter; use pure vanilla extract. I keep these ingredients on hand all the time. These are key to the flavor of the cake!
  • 4. Place the pan in the center of the oven. Cook at 325 F. for approx. 1 1/2 hours. Do not overcook, or the cake will be dry.
  • 5. **After drizzling the glaze on the hot cake, use a thin metal spatula and separate the cake gently around the circumference, allowing the glaze the flow down the outside of the cake. Let it sit a few minutes. **Don't stick holes into the cake for the glaze; the cake won't look 'pretty' when you slice it.
  • 6. To remove the tube with the heavy cake, I use a large wooden spoon through the tube. Carefully loosen the bottom of the cake and turn the cake over on your hand. Avoid up-ending the cake on a plate, as the top need to look "pretty" as well. Have a plate or Tupperware cake box ready for the bottom of the cake to rest on.
