Number Of Ingredients 7

3 cups dried white beans (or 4 cans cooked white beans, rinsed and drained)
1/2 cup Mesa de Vida Creole cooking & seasoning sauce
2 cups high-quality chicken or vegetable broth of your choice
1 chopped onion (reserve 4 Tb for topping, if desired)
1 chopped bell pepper
3 bay leaves
Salt and hot sauce to taste *Mesa de Vida cooking and seasoning sauces are extremely low in sodium so you can salt to your own taste/health needs

Steps:

  • Rince and drain your beans, then place them in a large metal or glass container. If prepping the night before you want to make the recipe: Pour enough cool water over the beans to cover by two inches. If prepping the morning you want to make the recipe (my preferred method): Pour enough boiling water over the top to cover by 2 inches. Let the beans soak on your counter until you are ready to proceed.
  • About 45 minutes before you want to make the recipe, rinse and strain the soaked beans. Pour the beans into the Instant Pot, add 6 cups of fresh water. Cook at pressure for 10 minutes, then let the pressure release naturally. Strain all of the liquid, then proceed with the rest of the recipe.
  • Place your cooked beans, Mesa de Vida Creole cooking & seasoning sauce, chopped onion, chopped bell pepper, broth and salt, to taste, into the Instant Pot. Cook at pressure for 10 minutes, then let the pressure release naturally.
  • Remove the lid and stir the beans vigorously to mash them a bit to create a creamy, thick consistency. Keep stirring and mashing until the consistency is as thick as you like it! *If your beans happen to still be too firm to mash, cook at pressure in 5 minute increments until they are tender. This recipe was tested with dried cannelini beans and dried pinto beans, and the times given worked perfectly. Beans can differ depending on their age and variety, so you may have to adjust cooking time.
  • Serve the beans, topped with a bit of fresh chopped onion and hot sauce, if you wish. It is typical to serve these creamy Southern-style beans with Johnny cakes (also called hoe cakes, or corn cakes - similar to a pancake made with corn meal), or over hot cooked rice. Enjoy!
