This is a recipe I developed after tweaking many other recipes. It has become a real favorite in my household! Easily adjustable to your preference of spiciness as well. Also easy to change to your liking by adding other veggies or peppers. Save time by cooking extra chicken ahead of time when making other chicken dishes. Serve with your choice of toppings, like sour cream, guacamole, sliced avocados, sliced black olives, or whatever else you like!

1 pound skinless, boneless chicken breast halves
½ cup water, or as needed
1 large onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, partially drained
1 (14 ounce) can whole kernel corn, drained
¾ cup picante sauce
1 (4 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon ground cumin
4 (8 inch) flour tortillas
1 (10.75 ounce) can condensed fiesta-style nacho cheese soup
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring chicken breasts and water to a boil in a large skillet; cook over medium heat until chicken juices run clear and meat is no longer pink inside, about 10 minutes. Transfer chicken breasts to a large plate, reserving pan juices in skillet, and shred chicken with 2 forks.
  • Cook onion and red bell pepper in reserved drippings over medium heat until onion is translucent, 5 to 8 minutes. Return shredded chicken to skillet. Stir black beans, corn, picante sauce, chopped green chiles, chili powder, and cumin into chicken mixture until thoroughly combined. Bring mixture to a simmer and cook until heated through, about 5 minutes. Pour chicken mixture into prepared baking dish.
  • Arrange flour tortillas in a single layer over chicken mixture. Stir fiesta soup with diced tomatoes and green chiles in a bowl until thoroughly combined; spread soup mixture over tortillas. Top casserole with Mexican cheese blend.
  • Bake in the preheated oven until cheese topping has melted and casserole is hot, about 30 minutes. Cool 5 minutes before serving.

1 medium onion, chopped (1 cup)
1 medium red bell pepper, chopped (1 cup)
1 medium poblano chile, chopped (3/4 cup)
1 medium jalapeño chile, seeded and finely chopped
3 tablespoons Gold Medal™ all-purpose flour
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
2 cups Progresso™ chicken broth (from 32-oz carton)
4 oz (half of 8-oz package) cream cheese, softened
1 cup shredded sharp Cheddar cheese (4 oz)
4 1/2 cups uncooked bow-tie (farfalle) pasta (12 oz)
2 cups shredded deli rotisserie chicken
1 cup Cascadian Farm™ organic frozen corn (from 10-oz bag)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (10 oz) Old El Paso™ mild red enchilada sauce
1 1/2 cups crushed tortilla chips (about 6 oz)
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped red onion

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Stir in onion, bell pepper, poblano and jalapeño chiles; cook about 6 minutes or until vegetables are softened. Stir in flour and taco seasoning mix; cook and stir 1 minute. Gradually beat in broth with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in cream cheese and Cheddar cheese.
  • Meanwhile, cook pasta as directed on package for minimum cook time. Drain; stir pasta into sauce with chicken, frozen corn and black beans. Pour pasta mixture into baking dish, and pour enchilada sauce over top.
  • Bake 15 minutes. Remove from oven, and sprinkle with tortilla chips. Bake 15 to 20 minutes or until heated through and sauce is bubbling around edges. Let stand 15 minutes before serving. Garnish with cilantro and red onion just before serving.
  • To freeze: Line 13x9-inch (3-quart) glass baking dish with foil, making sure foil is as smooth as possible, as wrinkled foil may get stuck in sauce during freezing process. Leave enough overhang to lift casserole out of dish. Spray foil with cooking spray. Cover and refrigerate sauce 30 to 40 minutes before assembling casserole. Mix sauce with cooked pasta, chicken, frozen corn and beans; spread in lined baking dish (do not add enchilada sauce); cover tightly with another layer of foil. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Remove foil, and transfer to 13x9-inch (3-quart) glass baking dish sprayed with cooking spray. Cover and thaw in refrigerator until completely thawed, at least 48 hours. Heat oven to 350°F. Remove cover, and top with enchilada sauce. Bake 20 minutes; top with crushed tortilla chips. Bake 25 to 30 minutes or until heated through and bubbly around edges (165°F in center). Let stand 15 minutes. Top with cilantro and red onion just before serving.

1 medium onion, diced
2 cloves garlic, minced
1 medium jalapeño, seeded and diced
1 medium bell pepper, seeded and diced
1 medium zucchini, quartered lengthwise and sliced
1/2 tablespoon chili powder
3/4 teaspoon salt
1 cup frozen corn kernels
1 (15-ounce) can diced tomatoes with chiles (see Chef's Tip, below)
1 (15-ounce) can black beans, drained and rinsed
3 cups Taco Rice
2 cups shredded sharp cheddar
2 green onions, thinly sliced

Steps:

  • Preheat the oven to 375°F. Coat an 8-by-8-inch casserole dish with nonstick cooking spray.
  • In a large skillet, heat the vegetable oil over medium-low heat. Add the onion and garlic and cook for about 5 minutes, or until the onions have softened. Add the jalapeño and bell peppers, zucchini, chili powder, and salt to the skillet and stir to combine. Raise the heat to medium and continue to sauté until the vegetables are soft and no liquid remains on the bottom of the skillet, about 10 minutes.
  • In a large bowl, combine the corn kernels, diced tomatoes and chiles, and black beans. Add the sautéed vegetables, Taco Rice, and shredded cheddar cheese to the bowl and stir until evenly mixed.
  • Pour the rice and vegetable mixture into the prepared casserole dish and bake for 20 minutes.
  • Sprinkle the green onions over the casserole and serve.

1 (2 pound) spaghetti squash, halved and seeded
1 (15 ounce) can Mexican-style diced tomatoes, undrained
1 (15 ounce) can black beans, rinsed and drained
¾ cup shredded reduced-fat Monterey Jack cheese
¼ cup minced fresh cilantro
1 teaspoon ground cumin
¼ teaspoon garlic salt
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Place spaghetti squash, cut-side down, on the baking sheet.
  • Bake squash in the preheated oven until skin can easily be pierced with a fork and insides are tender, 30 to 40 minutes. Remove from the oven (leave oven on) and allow to rest until cool enough to handle, about 10 minutes. Scrape out flesh with a fork and transfer to a large bowl; discard skins.

10 3/4 ounces Campbell southwest-style pepper jack soup

1/2 cup mayonnaise (Hellman's, not Miracle Whip)
2 tablespoons Progresso Italian-style fine bread crumbs
1 -2 tablespoon margarine, cut into slivers
1 cup shredded cheddar cheese
salt & pepper (to taste)

Steps:

  • Cook macaroni according to package directions to "al dente", then drain and rinse with cool water, and let drain again.
  • Meanwhile, combine soup, mayonnaise and milk, and stir until smooth.
  • Preheat oven to 350 degrees and slightly grease a 2 quart glass baking dish.
  • Mix macaroni, soup mixture, cheddar cheese, salt & pepper, and flaked tuna thoroughly in a large bowl.

1 lb bulk pork sausage (Jimmy Dean Hot Breakfast Sausage)

Steps:

1 teaspoon Montreal Steak or chicken seasoning
16 oz. tomato sauce
1- 10 oz can of diced tomatoes & green chilies
1 1/2 tsp dried oregano
1 packet taco seasoning or 2 Tablespoons homemade
1 (15.25 ounce) can corn
2 cup shredded Mexican four cheese blend
sliced green onions for garnish
sour cream, optional

Steps:

  • Cook pasta according to package directions. Drain and set aside. In large skillet cook ground beef, onions, bell pepper, red pepper flakes and steak seasoning until beef is cooked through and onions are translucent. Add the tomato sauce, diced tomatoes, oregano and chili powder. Simmer for 15 minutes, allowing flavors to blend together. Add corn and simmer for 2 more minutes. It is great for a family meal, as party fare, or to take to a pot luck. I also like it because you can feed a lot of people with a few inexpensive ingredients.

3 large boneless skinless chicken breasts
2 (26 ounce) jars of walmart corn and black bean salsa
1 (15 1/2 ounce) can black beans
1 (10 ounce) bag frozen sweet corn, thawed
24 small flour tortillas
2 cups shredded Mexican blend cheese
ground cumin
celery salt

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle chicken breast generously with cumin and celery salt on both sides.
  • Place chicken in microwave steam bag, and cook according to package directions, reserving any cooking liquid.
  • Shred cooked chicken with two forks.
  • Combine shredded chicken, black beans, corn, and 1/2 of one jar of salsa and reserved cooking liquid in a large bowl.
  • Spread 1/2 of one jar of salsa into the bottom of two 13x9 baking dishes.
  • Place aprox. 3-4 tablespoons of the chicken mixture in the center of each tortilla and roll up.
  • Put each roll, seam side down, close together into baking dish.
  • Top each dish with 1/2 of the remaining salsa.
  • Sprinkle with cheese.
  • Bake at 350 degrees for 15-20 minutes or until cheese is melted and dish is bubbly.

1 lb pork sausage
4 cups colby or 4 cups monterey jack cheese
6 eggs

2 cups half-and-half

Steps:

  • Lightly butter both side of bread slices and place in 9x13-inch baking dish.
  • In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.

1/2 cup celery, chopped
1 1/2 cups corn kernels
1 1/4 cups mayonnaise
1 cup salsa
1 teaspoon chili powder (optional)
6 ounces tuna in water
2 1/2 cups gluten-free pasta (rotini, penne or fusilli)
1 cup goat cheese, shredded (optional)

Steps:

  • Preheat the over to 350 degrees F. Coat a 2-quart casserole dish with non-stick cooking spray and set aside.
  • Cook the pasta according to package directions.
  • Place a large skillet over medium-high heat. Coat with the canola oil, and when the oil is hot, add the onion and celery. Cook and stir until the vegetables soften, about 3 minutes.
  • Stir in corn and cook 2 minutes longer to incorporate.
  • Stir in the mayonnaise, salsa and chili powder until well blended. If it seems too thick, thin with a few teaspoons of non-dairy milk (almond milk, rice milk or soy milk) or some gluten-free chicken stock.
  • Add the tuna and cooked pasta, stirring just to coat.
  • Pour into the prepared casserole dish.
  • Sprinkle top evenly with cheese (optional).
  • Bake for about 25 minutes or until bubbling. Remove from oven and serve immediately.

This is a twist on a taco casserole. I love to create in the kitchen. I made this last night, and the family loved it, so I thought I would jot it down while it is still fresh in my mind. This does have a kick to it and I would suggest that if you don't like spicy you can modify to your taste. I hope you enjoy as much as we did.

1 lb ground beef
1 link chorizo sausage
1/2 medium onion, diced
2 garlic cloves, minced
1 (1 1/4 ounce) package taco seasoning
2 tablespoons Sazon Goya seasoning (optional)
1 jalapeno pepper, chopped (you can remove the seeds for less heat)
salt and pepper
1 (10 1/2 ounce) can cheddar cheese soup
1/2 cup milk
1 (14 1/2 ounce) can tomatoes and green chilies, diced
1 (14 1/2 ounce) can black beans
1 (14 1/2 ounce) can corn
1 cup sharp cheddar cheese, grated
1 cup monterey jack pepper cheese, grated
1 cup salsa
18 corn tortillas
cooking spray
sour cream
black olives
onion, Chopped
lettuce, Shredded

Steps:

  • preheat oven to 375 degrees.
  • Remove Chorizo sausage from casing, place in large skillet and saute over med-high heat.
  • Once sausage has started to release fat, add the onion, jalapeno, and garlic.
  • As onions become translucent add the ground beef and cook until browned.
  • drain about 2/3 of the fat from the pan then add taco and Sazon seasonings.
  • Stir to combine and let simmer on low.
  • Empty can of soup into a bowl and add 1/2 the can of milk, mix well, set aside.
  • Heat tortilla on both sides. I used a griddle, but a non stick pan will work as well. Once heated, cut into fourths.
  • spray a 9x13 baking dish with cooking spray. Arrange tortilla pieces to cover the bottom of the pan.
  • Add meat mixture over the tortillas, spread evenly.
  • Now layer the following ingredients: tomatoes, corn, beans, and soup mixture.
  • Arrange a layer of tortilla's to cover casserole.
  • Pour cup of salsa over tortillas just enough to cover.
  • Bake in oven for about 20 minute Then add the shredded cheeses and bake another 10 min, until cheese has melted and is bubbly.
  • I served with chopped onion, chopped black olives, and a dollop of sour cream.

2 English muffins, split
1/2 pound bulk pork sausage
4 large eggs
1/4 cup sour cream
1/2 cup shredded sharp cheddar cheese
1/4 cup canned chopped green chilies

Steps:

  • Spread butter over cut sides of each muffin half. Place buttered side up in an 8-in. square baking dish coated with cooking spray; set aside., In a small skillet, cook sausage over medium heat until no longer pink; drain. Spoon sausage over muffin halves. In a small bowl, whisk eggs and sour cream; pour over sausage. Sprinkle with cheese and chilies. Cover and refrigerate for 3 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake at 350° for 20-25 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

Today was my first time trying spaghetti squash and I was not disappointed. This is a super tasty low calorie meal. Hope you enjoy!

1 spaghetti squash, cooked and shredded
1 lb extra lean ground beef (or ground chicken, turkey or pork)
1 small onion, chopped
1 medium bell pepper, chopped
3 tsp garlic, minced
1/2 Tbsp taco seasoning
salt and pepper to taste
1/4 tsp red pepper flakes, optional
1/2 c refried beans (i used fat free)
1 (14-oz) can black bean, drained and rinsed
1 (10-oz) can tomatoes with chili peppers (rotel) original, mild or hot
1 c cheddar cheese, shredded
additional salt, pepper and taco seasoning for squash

Steps:

  • 1. Preheat oven to 375 degrees. Grease a 9x9" baking dish for the casserole. Use a different pan for baking the squash.
  • 2. With sharp knife slice top out of squash. Stand squash flat on the cut side. Slice squash in half. NOTE: this squash was not easy to cut, pretty tough skin.
  • 3. Scoop out the seed and membrane.
  • 4. Brush inside of each half with oil; sprinkle with salt an pepper. Place cut sides down in baking pan.
  • 5. Bake for about 40 minutes or until squash is fork tender.
  • 6. Remove from oven; let cool for about 10 minutes or until cool enough to handle.
  • 7. REDUCE oven heat to 350 degrees.
  • 8. Using a fork, scrape out the spaghetti squash. Place in bottom of prepared baking dish. Sprinkle with salt and pepper and a small amount of the taco seasoning; toss. Spread squash evenly over bottom of baking dish.
  • 9. In large skillet over medium heat, cook meat, onion, pepper, and garlic until meat is cooked. Add taco seasoning and add salt and pepper to taste. Add pepper flakes for a little more heat. Stir in refried beans and black beans. Remove from heat.
  • 10. Layer beef mixture over squash.
  • 11. Drain some of the liquid from Rotel tomatoes. Spread tomatoes evenly over top of meat layer using about 2 tbsp. of the liquid.
  • 12. Bake for 40 minutes or until bubbly. Remove from oven; sprinkle cheese evenly over top. Return to oven and bake a few more minutes until cheese has melted.

2-1/2 cups uncooked macaroni (*see note)
1 can (10-3/4 oz.) campbell's fiesta nacho cheese soup
1 soup can filled with milk (l used 2% milk)
1/2 cup mayonnaise (do not use salad dressing)
1 cup shredded sharp cheddar cheese
1/4 tsp. pepper (*or use mccormick's hot shot! seasoning)
2 (5 oz.) cans solid white albacore tuna in water, drained well
3 Tbsp italian-style bread crumbs
2 Tbsp butter, melted
(*note: mccormick hot shot! seasoning, is a blend of black pepper and red pepper. )

Steps:

  • 1. Grease the inside of one 2-1/2 quart casserole baking dish; set dish aside.
  • 2. Cook macaroni according to package directions to "al dente" (9 to 11 minutes). Once cooked, drain and rinse with cold water, then drain again.
  • 3. While the macaroni is cooking, in a large bowl combine together, the soup, milk, and mayonnaise. Then stir in the shredded cheese, pepper, and tuna. (If desired, sprinkle in a bit of salt.)
  • 4. Stir in the cooked macaroni, then pour the mixture in the casserole baking dish.
  • 5. Sprinkle the bread crumbs evenly on top, then pour the melted butter over the bread crumbs.
  • 6. Place casserole (uncovered) in a 350 degree oven, and bake for 30-35 minutes. (I baked mine for 35 minutes.)
  • 7. Once heated through, remove from the oven and serve immediately.
  • 8. *Note: Whenever I make this casserole, I always use Rotini pasta, and use 3 cups, which I cook anywhere from 10-11 minutes. Also, if I don't have a can of Fiesta Nacho Cheese Soup on hand, but have a can of cheddar cheese soup, I'll use that, and I'll only use a half soup can of milk, plus a half soup can of mild salsa. I'll also substitute shredded Mexican cheese for the cheddar.

It is super easy to throw together, and uses pantry staples most of us have on hand. I really enjoyed it with tuna, but I think it would be just as good Vegetarian or with cooked chicken, cooked ground beef or cooked sausage. I made this pretty mild, but it can easily be spiced up with fresh or canned jalapenos or added red pepper flakes or hot sauce. Feel free to use reduced-fat cheese.

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 (12 ounce) can tuna, drained and flaked (You could make this Vegetarian or use cooked chicken, cooked ground beef, or cooked sausage)
1 red bell pepper, seeded and diced
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can diced green chilies
1/4 cup pickled jalapeno pepper, chopped (to make it spicier, you can use fresh jalapenos or canned chopped jalapenos)
3 cups colby-monterey jack cheese, shredded (2 for filling, 1 to top)
1 cup sour cream
3/4 cup salsa, drained (I used Pace chunky mild salsa)
1/4 cup cilantro, minced
2 garlic cloves, minced
1 teaspoon ground cumin
1/2-1 teaspoon salt, to taste
1/2-1 tomatoes, seeded and chopped
6 green onions, sliced
sour cream, to serve
hot sauce, to serve (we like Tapatio)

Steps:

  • Preheat oven to 350°F Grease a 13x9 baking dish.
  • Mix together the first 8 ingredients through the first 2 cups of shredded cheese.
  • Mix together the sour cream, salsa, cilantro, garlic, cumin and salt and stir into the potato mixture until it's well coated.
  • Spread mix into prepared baking dish and top with remaining cup of cheese.
  • Bake for 60 minutes.
  • Remove from oven and top with fresh chopped tomatoes and sliced green onions.
  • Can serve right away, but sauce will thicken more if you let it sit 10-15 minutes.
  • Serve with sour cream and hot sauce. This is really good served alongside a crisp salad.
