1 (1.06 ounce) package mesquite marinade
2 (4 ounce) skinless, boneless chicken breast halves
1 teaspoon olive oil
½ medium red bell pepper, sliced
½ medium green bell pepper, sliced
½ medium onion, sliced
2 teaspoons salted butter, softened
4 slices sourdough bread
¾ cup shredded Monterey Jack cheese

Steps:

  • Whisk water, vegetable oil, and marinade mix together in a glass or ceramic bowl. Add chicken and toss to coat. Cover with plastic wrap and marinate in the refrigerator for 15 to 30 minutes, or overnight.

½ cup grape tomatoes, halved
½ cup corn, thawed if using frozen

15 oz black beans, 1 can, rinsed and drained
3 cloves garlic, minced, plus 3 cloves, halved

4 garlic cloves
1 jalapeno, seeded and chopped
1/2 lime, juice of
2 tablespoons olive oil
1 pinch salt
1/4 cup mayonnaise
1 tablespoon canned chipotle chile puree (*)
1/2 teaspoon sugar
butter, softened
4 slices bread, 1/2 inch thick
2 ounces monterey jack pepper cheese, thinly sliced
3 ounces rotisserie cooked chicken, torn into pieces

  • * Puree a can of chipotles in adobo and keep in a jar in the refrigerator.
