When cookbook author Diane Kochilas began dressing pasta with yogurt, her intention was to adapt a classic Greek island dish that required an obscure cheese called sitaka. But, in doing so, she created a dinner of convenience that's striking enough to serve to company. The sauce has only two components: thick yogurt and starchy, salty pasta cooking water, which together create the soothing texture of an alfredo sauce, lightened up with yogurt's tang. But it won't taste austere, especially once you garnish with caramelized onions and Pecorino to balance out the sweetness and salt. This recipe is excerpted from Food52 Genius Recipes. 5 Tbs. extra-virgin olive oil
6 cups coarsely chopped or sliced onions
Sea salt
1 lb. tagliatelle or other fresh pasta
2 cups thick, strained Greek-style yogurt (see note below)
1 cup coarsely grated kefalotyri or Pecorino Romano cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat and add the onions. Decrease the heat to medium-low and cook, stirring frequently and seasoning with salt to taste as you go, until the onions are soft and golden brown, 20 to 30 minutes.
  • Meanwhile, fill a large pot with water and bring to a boil. As the water heats, add enough salt so that you can taste it. Add the pasta and cook until soft, just past al dente. Drain the pasta, reserving 1/2 cup of the pasta water. Combine the yogurt with 1/4 cup cooking water and mix well. Add more of the reserved pasta water as needed to get the sauce to your desired thickness. Toss the pasta with the yogurt mixture. Serve the pasta immediately, sprinkled generously with cheese and topped with the caramelized onions and their juices.

I copied and adjusted this recipe from a cookbook a long time ago. I make it every now and then when I get cravings for it and the kids love it as well. You can adjust the ingredients to your liking. I myself never measure anyway. You can use wide egg noodles, spaghetti or linguine.

1 lb pasta
6 tablespoons butter
3 onions, grated or finely chopped
1/2 teaspoon salt
2 -3 garlic cloves, minced
1 1/2 cups yogurt, room temperature
ground pepper
fresh herb (optional)

Steps:

  • Prepare pasta according to package directions.
  • In skillet heat 4 Tbs of the butter over medium heat. Once it sizzles add onions. Salt and sauté, stirring continually, until onion begins to brown.
  • Add garlic and continue cooking for 3-4 minutes.
  • Remove from heat, add remaining butter. Let it melt.
  • In a serving bowl toss the drained Spaghetti with the yogurt, then add onion and garlic mixture and black pepper.
  • At this point you could add chopped up fresh herbs.
  • Depending on how you like it, you could add more yogurt.
  • Serve immediately!

2 tablespoons extra-virgin olive oil, plus more for drizzling
3 pounds onions, halved and cut lengthwise into 1/4-inch-thick slices
5 sprigs fresh thyme
1 bay leaf
Coarse salt and freshly ground pepper
3 tablespoons dry white wine
1 pound whole-wheat spaghetti
3/4 cup fresh flat-leaf parsley leaves
2 cups homemade yogurt or store-bought plain low-fat yogurt

Steps:

  • Combine oil, onions, thyme, bay leaf, and 1 teaspoon salt in a large saute pan; cook over medium heat, stirring occasionally, until onions are tender and golden brown, about 1 1/2 hours. If the pan becomes dry, add water, 1 tablespoon at a time, to prevent onions from burning.
  • Add wine, and bring to a boil, scraping up browned bits with a wooden spoon. When wine has evaporated, remove pan from heat; discard thyme sprigs and bay leaf.
  • Meanwhile, bring a large pot of water to a boil. Add pasta; cook until al dente. Drain. Stir pasta, parsley, and 1 teaspoon salt into onions; season with pepper.
  • Divide pasta among 6 bowls. Top each serving with 1/3 cup yogurt, drizzle with oil, and season with pepper.

Steps:

  • Put a large pot of heavily salted water on and let it come to a boil.

Cook paste for 1 minute, then add herbs and olives, stir everything together, and cook another 1 minute.
  • Stir in cooked pasta, butter, and salt to taste, tossing to coat pasta. Add pasta water if it looks dry. Serve with a generous squeeze of lemon, and sprinkle with Parmesan and more chile on top, if desired.

According to Diane Kochilas, author of The Glorious Foods of Greece, from whom I adapted this recipe, you can find this dish, Makarounes Tis Kassou, in many of the Dodecanese Islands. She says it's one of the best and easiest dishes in Greek cooking--I don't know if that's true, but I know this is delicious--sweet onions, tart yogurt, lovely texture. The key is the right yogurt--use Greek yogurt if possible, sheep's milk yogurt is the best, or use plain yogurt that you sit in a sieve and drain until it becomes lovely and thick. The only thing missing from this dish is a bit of color and I have found that adding some fresh Greek oregano or some fresh thyme does wonders both in terms of taste and presentation.

5 onions, peeled, halved and sliced thinly
1 lb fettuccine, preferably fresh
2 cups yogurt, sheep's milk
1 cup kefalotyri, coarsely grated (or substitute 1/2 cup coarsely grated gruyere and a 1/2 cup coarsely grated reggiano)
1/4 cup oregano (Greek or fresh)
1/4 cup thyme, fresh

Steps:

  • In a large skillet, melt the butter over medium high heat.
