Nothing equals fresh local tomatoes, but these small varieties-cherry, grape, and so on-are a welcome alternative in the dark months. Most are grown in greenhouses and some are imported from places such as Israel and Mexico and have great flavor.

4 cups cherry or grape tomatoes (about 40 tomatoes)
2 tablespoons olive oil, plus more to finish
Salt
1/2 teaspoon sugar
2 garlic cloves, chopped
1 teaspoon red chile flakes
1 tablespoon chopped fresh oregano, or a pinch dried
1 pound spaghetti
Freshly ground pepper
Grated Parmigiano-Reggiano (optional)

Steps:

  • Heat the oven to 400 degrees. Put the cherry tomatoes, 1 tablespoon of the olive oil, a big pinch of salt, and the sugar in a large bowl and toss to coat the tomatoes well. Line a rimmed baking sheet with a piece of parchment paper or aluminum foil. Pour the tomatoes onto the baking sheet, place them in the oven, and roast for 25 to 35 minutes, or until they collapse and their skins begin to char. Remove the tomatoes from the oven and let them cool slightly. Carefully lift the paper and pour the tomatoes and all their roasting juices back into the bowl.
  • Bring a large pot of water to a boil over high heat. Heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add the garlic and red chile flakes and sauté for about 1 minute.
  • Add the roasted tomatoes with their juices and the oregano. Use a spoon to break up the tomatoes and cook until they are heated through. When the water is rolling, add a big pinch of salt, drop in the spaghetti, and stir. Cook the pasta according to the package instructions for al dente. Remove and reserve some of the pasta cooking water, then drain the pasta.
  • Add the pasta and about 1 tablespoon of the reserved cooking water to the tomato sauce. Stir and toss to thoroughly coat the spaghetti. Add a tablespoon or so of the remaining pasta water if the sauce is too dry or thick; drizzle with olive oil and season with salt and pepper to taste.
  • Turn the pasta into a serving bowl or individual bowls and pass the cheese, if using, at the table.

2 tablespoons olive oil
3 cloves garlic, minced
2 cups cherry tomato
salt, to taste
pepper, to taste
1 cup white wine
1 cup parmesan cheese
½ cup fresh basil, chopped

Steps:

  • Cook spaghetti in boiling salted water until it's al dente. Reserve 1 cup (235 ml) of the pasta water before draining.
  • While the spaghetti is cooking, heat olive oil in a large pan (it should be large enough to toss the pasta in). Add garlic and tomatoes, and stir until well-incorporated. Season with salt and pepper.
  • Cook tomatoes down for 5 minutes until they soften and release some of their juices.
  • Then add the wine and allow that to reduce for 5-10 minutes until you're left with a syrupy sauce.
  • Add the pasta to your sauce, along with a splash of pasta water and toss to coat it for about 1-2 minutes so the pasta finishes cooking and absorbs the flavor of the sauce.
  • Add the parmesan and basil. Add another small splash of pasta water, if needed. Toss until the cheese is melted down and you're left with a smooth sauce.
  • Gradually add small amounts of pasta water, as needed, until the sauce reaches your desired smoothness.
  • Top off with extra parmesan and basil and serve immediately.

150 g fresh spinach, finely chopped
100 g grape tomatoes, cut in halves
1/4 cup parmesan cheese, Freshly grated

1 teaspoon extra virgin olive oil
1/2 teaspoon salt

Steps:

  • Put the spaghetti on boil, partially covered, with about 3 cups water and 1/2 teaspoon of salt.
  • In a separate pan, heat 1 teaspoon olive oil. Add the grape tomatoes and sautee for 2 minute Add the grated garlic and stir to coat tomatoes with them, about 20 seconds.
  • Add the chopped spinach, toss with the tomatoes. Cook for about 3 min, until spinach is wilted. Add the basil and stir. Turn off heat and wait until spaghetti is done.
  • When spaghetti is done, drain about 1/2 cup of cooking liquid from spaghetti into the pan with the spinach and tomatoes and start heat on low. Discard the remaining cooking liquid if any. Add the grated parmesan to the pan and bring to a boil for about 30 seconds, mixing to make sure the parmesan melts.
  • Pour the contents of the pan into the spaghetti pot and stir over a medium flame until liquid is almost gone, 2-3 minutes. Done!
  • Tip: The spinach tends to clump together because of the cheese. You can separate it or leave it; the spinach clumps have a nice texture of their own.
  • Tip: I was surprised to discover this tastes almost as good with no cheese at all. So you can make a much healthier version. It is also tolerant to different amounts of olive oil.
