1 cup pineapple juice
1/2 cup light rum or vodka, about 4-ounces
1/2 cup blue curacao, about 4-ounces
1/2 cup cream of coconut (not coconut milk), about 4-ounces
10 to 12 ice cubes

Steps:

  • Mix together and strain into martini glass. Rim the glass with shredded coconut.
