2 tablespoons olive oil
2 onion slices
2 slices sourdough bread
1 tablespoon unsalted butter
3 slices SPAM (about 1/4-inch thick)
Mayonnaise or mustard, for serving
5 or 6 pickle slices
Lettuce, tomato or pickled jalapenos, optional
Serving suggestion: fries

Steps:

  • In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
  • Toast bread, either on the grill top or toaster.
  • In a pan with butter, cook SPAM until browned, about 5 minutes per side.
  • Spread your favorite sandwich spread (mustard or mayo) on your toast; I prefer a nice spicy brown mustard. Add SPAM, grilled onions and pickle slices. Add lettuce and tomato or pickled jalapenos if it floats your boat. Sometimes you can switch it up and use RAW ONION, instead of grilled. Go crazy! It's your SPAM; do what you want.

¾ (1 pound) loaf processed cheese food (such as Velveeta®), cubed
2 tablespoons sweet pickle relish
½ cup creamy salad dressing (such as Miracle Whip®)
8 hamburger buns, split

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).

1/4 sweet onion, chopped

1 (12 ounce) container Spam™ luncheon meat, diced
¾ cup button mushrooms, chopped
½ head red leaf lettuce, rinsed and torn
1 cup baby spinach leaves
2 eggs
½ cup crumbled feta cheese
1 tablespoon finely grated Parmesan cheese
1 tablespoon finely chopped salted peanuts
4 tablespoons chopped dill
8 anchovy fillets
4 tablespoons Ranch dressing
1 cup croutons, purchased or homemade

Steps:

  • Heat a large skillet over medium-high heat. Fry the meat in the preheated skillet until it is golden brown and crispy. Remove from skillet and drain on paper towels. Cook the mushrooms in the same skillet until softened. Remove from skillet and set aside. Crack the eggs into the skillet and cook while stirring until they are cooked through and scrambled. Turn off the heat.
  • Divide the red leaf lettuce and baby spinach leaves between two large salad bowls. Top the salad greens with the fried luncheon meat, mushrooms and scrambled eggs. Sprinkle both salads with crumbled feta cheese, Parmesan cheese, chopped peanuts, and dill. The carrots give a hint of sweetness that counteracts the salty flavor of Spam. Dill relish adds a bit of tanginess. We tried it on crackers and a sandwich - loved both!

4-6 - hard boiled eggs
3 - celery stalks, chopped
3 - carrots, grated
1/4 cup(s) onion
1/4 cup(s) dill relish

1 cup(s) mayonnaise, or more if you like.

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
