SPEEDY BEEF STROGANOFF

Speedy Beef Stroganoff image

This is a super easy recipe that is very forgiving, one of our family standards. My husband makes it often without ever consulting the recipe and it always turns out well. My kids were excited to have this for dinner when they were little, and they still love it now that they are teenagers. These days, they even make it themselves!

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

1 garlic clove, minced
1/2 cup onion, chopped
1 lb ground beef
1/4 cup flour
1/4 cup milk
3/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/2-1 teaspoon paprika
1 cup raw mushrooms, sliced (or 4 ounce can sliced mushrooms drained)
1 (10 ounce) can cream of mushroom soup
1 cup sour cream
1/2 lb hot cooked egg noodles

Steps:

  • Saute meat, onions, and garlic in a hot skillet about 5 minutes, until meat is browned.
  • If using raw mushrooms, add them now, and cook until they are soft.
  • Stir in flour and seasonings. Cook a minute or two so the flour won't taste raw.
  • Gradually stir in the milk.
  • Add the soup and, if you are using canned mushrooms, add them now, too. Heat through.
  • Stir in sour cream and heat but do not boil.
  • Add a little more milk to adjust consistency, if desired.
  • Taste and adjust seasoning.
  • Serve on hot rice or noodles.

SPEEDY STROGANOFF

Using porterhouse steak makes this stroganoff very tender and tastey...you could use another cut if it is on sale with very similar results. If it is a fairly cheap cut of meat, marinate it for 1 hour in the refrigerator with 1 tbsp vinegar, 1 tsp salt and enough water to cover. This will tenderize the meat. It is best to slice the meat while partially frozen, and slice it diagonally across the grain to make the meat more tender and also make it look larger in the dish! To make this more economical, use ground beef, but be sure to drain the grease from the pan! Note: Prep time does not include marinating a less tender cut of beef!

Tips for Making a Perfect Beef Stroganoff:

- Use high-quality beef: Choose a tender cut of beef, such as sirloin or tenderloin, for the best results. - Cut the beef against the grain: This will help to tenderize the meat and make it more flavorful. - Brown the beef in batches: Don't overcrowd the pan when browning the beef. This will prevent the meat from steaming instead of browning. - Use a good quality broth: The broth you use will make a big difference in the flavor of the stroganoff. Choose a beef broth that is rich and flavorful. - Don't overcook the beef: The beef should be cooked until it is just tender. Overcooking will make it tough and chewy. - Use fresh mushrooms: Fresh mushrooms will give your stroganoff the best flavor. If you can't find fresh mushrooms, you can use dried mushrooms that have been soaked in hot water until softened. - Use a good quality sour cream: The sour cream will help to balance out the richness of the stroganoff. Choose a sour cream that is thick and creamy. - Serve over egg noodles or rice: Beef stroganoff is traditionally served over egg noodles or rice. You can also serve it over mashed potatoes or roasted vegetables.
