REFRIGERATOR JAM
Found this little gem in an old Woman's Day magazine I had laying around the house. You choose the fruit; strawberries, peaches, blueberries, plums, or whatever other combination you can come up with. 4 pounds of fruit makes about seven half-pints. This isn't exactly a speedy process and requires a lot of stirring so grab a good cookbook to read!

Tips:
- Choose ripe, flavorful blueberries for the best jam.
- Use a large saucepan or pot to make the jam, as it will bubble up and expand during cooking.
- Stir the jam constantly to prevent it from sticking to the bottom of the pan and burning.
- Be careful not to overcook the jam, as it will thicken as it cools.
- Test the jam for doneness by dropping a small spoonful onto a cold plate. If the jam wrinkles when you push it with your finger, it is ready.
- Pour the jam into sterilized jars and seal them tightly. The jam can be stored in the refrigerator for up to 3 weeks, or in the freezer for up to 1 year.
Conclusion:
This speedy blueberry refrigerator jam is a delicious and easy way to preserve your summer berries. It is perfect for spreading on toast, biscuits, or pancakes, or using as a filling for pies and tarts. With its bright flavor and beautiful color, this jam is sure to be a hit with your family and friends.
