Pie dough (2 sheets per pie)
Shredded cheese (we like a Mexican blend, 1- 2 cups)
Egg wash (1 egg white + 1 tablespoon water)

Steps:

  • Press a layer of dough into your pie plate. Paint with egg wash and bake at 375 degrees for 5 minutes. Allow to cool completely.
  • Pour chili into pie dish, and top with shredded cheese.
  • Paint egg wash on outer edges of lower pie crust, then place top layer of pie crust over the pie. Press edges down with a fork to seal, brush entire top with egg wash, then cut a few slits in the top to vent.
  • Bake at 375 degrees on middle rack for 25 - 30 min until crust is browned and chili is heated through.

2 tablespoons olive oil
2 tablespoons salted butter
4 cloves garlic, minced
2 large poblano chiles, diced
1 large onion, diced
1 jalapeno pepper, seeded and diced small
2 pounds spicy Italian sausage
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Two 15-ounce cans green enchilada sauce
One 16-ounce jar salsa verde
One 4-ounce can diced green chiles
1 lime, juiced
1 cup sour cream
1/2 cup thinly sliced radish
1/4 cup fresh cilantro leaves
Hot sauce, to taste

Steps:

  • Cook the rice according to the package instructions.
  • Meanwhile, heat the olive oil and butter in a large Dutch oven over medium heat. When the oil is hot and the butter has melted, add the garlic, poblanos, onions and jalapenos, then stir to combine. Add the sausage meat and season with the salt and pepper. Cook the sausage, crumbling it as you go, until browned, 8 to 10 minutes.

One 10-ounce bag (about 2 cups) frozen chopped onion and pepper mix
One 15-ounce can black beans, drained and rinsed
1 chipotle in adobo sauce (from a 7-ounce can), chopped, plus 1 tablespoon adobo sauce
1 cup frozen corn kernels
One 4.5-ounce can green chiles
2 cups chicken stock
1 small rotisserie chicken, meat shredded (about 2 1/2 cups), bones and skin discarded
One 16.3-ounce can flaky refrigerator biscuits, each biscuit peeled in half along the middle layer
1/2 cup crema or sour cream
1/4 cup fresh cilantro leaves
Thinly sliced Fresno chile and lime wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a 10-inch cast-iron skillet over medium heat. While the butter is melting, add the chili powder, cumin and paprika and "bloom" the spices. Add the flour and cook, stirring, 30 seconds to 1 minute. Add the frozen vegetable mix and let it cook, stirring occasionally, until softened, about 5 minutes. Add the beans, chipotle and adobo sauce, corn and green chiles. Stir in the chicken stock and let it thicken slightly. Add the shredded chicken and stir together.

Ha! So, tonight, I found out that I could speed it up successfully. It's the easy way out, all around, I think, but we need those sometimes.

2 (10 3/4 ounce) cans Healthy Request cream of chicken soup (I use one cream of celery soup sometimes)
1/2 cup skim milk
3/4 lb boneless skinless chicken breast, cubes and boiled (can use canned chicken in a pinch)
1 cup frozen peas
1/2 cup frozen corn
1/2 cup zucchini, sliced and quartered
2 carrots, diced
1 stalk celery, diced
1/2 cup onion, diced (I use a red onion)
1 teaspoon salt
1/2 teaspoon thyme
1 cup Bisquick reduced-fat baking mix
1/4 cup skim milk
1 egg
salt
pepper

Steps:

  • Spray a casserole dish (I don't know what size-ha!) with cooking spray. Toss in veggies and chicken. Dump the soup, milk, and spices in and give it a little whirl with a spoon.
  • Cover with saran wrap and either place in the fridge for later or microwave on high for 6-8 minutes, stirring once. If you choose to refrigerate it, microwave on high for 10 minutes, stirring twice.
  • Preheat oven to 400.
  • Mix up the crust ingredients and pour over top. Toss some salt and pepper on top, if desired. Set in the oven and allow to bake 15 minutes or until the biscuit crust is golden.
  • Remove from oven and allow to cool for 10 minutes before taking your first big bite.
