Tips:

  • If you don't have any spelt flour, you can substitute it with all-purpose flour. However, the cookies may be a bit denser.
  • Use old-fashioned rolled oats for the best texture. Quick-cooking oats will make the cookies too mushy.
  • Be sure to toast the oats before using them. This will help to bring out their flavor and make them more digestible.
  • If you don't have any raisins, you can substitute them with other dried fruits, such as cranberries, cherries, or apricots.
  • Be careful not to overmix the dough. Overmixing will make the cookies tough.
  • If you want chewier cookies, chill the dough for at least 30 minutes before baking.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.

Conclusion:

These spelt oatmeal raisin cookies are a delicious and healthy snack that are perfect for any occasion. They are easy to make and can be customized to your liking. Whether you enjoy them warm from the oven or cold from the fridge, these cookies are sure to be a hit with everyone who tries them.
