Time 40m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
3 cups frozen pepper-and-onion stir-fry blend, finely chopped
1 cup whole-wheat couscous
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground beef
2 cloves garlic, finely grated
1 tablespoon ras el hanout (Moroccan seasoning)
3/4 cup nonfat plain Greek yogurt
Finely grated zest and juice of 1/2 lemon
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1/4 cup chopped dried apricots

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the frozen vegetables and cook, stirring occasionally, until the liquid is evaporated, 8 to 10 minutes. Transfer half the vegetables to a large bowl and half to a medium bowl; reserve the skillet. Add the couscous, 1/2 teaspoon salt, a few grinds of pepper and 1 1/2 cups boiling water to the large bowl. Stir to combine, cover and set aside 10 minutes.
  • Meanwhile, add the ground beef, garlic, ras el hanout, 1/2 teaspoon salt and a few grinds of pepper to the medium bowl. Mix with your hands until completely combined. Divide into eight 4-inch logs. Heat the remaining 1 tablespoon olive oil in the reserved skillet over medium heat; add the beef logs and cook, turning, until browned, about 8 minutes.
  • Whisk the yogurt, lemon zest and juice in a small bowl. Fluff the couscous with a fork and stir in the mint, parsley and dried apricots. Divide the couscous, yogurt sauce and patties among plates.

Tips:

  • Choose the right beef: Use a lean ground beef, such as 80/20 or 90/10, to prevent the patties from becoming too dry.
  • Season the beef well: Don't be afraid to use a generous amount of spices and herbs to flavor the beef patties. This will help them stand out from ordinary burgers.
  • Don't overmix the beef: Overmixing the beef will make the patties tough. Just mix the ingredients until they are combined.
  • Cook the patties over medium heat: This will help prevent them from burning on the outside while remaining raw on the inside.
  • Let the patties rest before serving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful patty.
  • Serve the patties with your favorite toppings: Some popular options include cheese, bacon, lettuce, tomato, and onion.
  • Experiment with different types of couscous: There are many different types of couscous available, each with its own unique flavor and texture. Try a few different types to find one that you like best.
  • Add vegetables to the couscous: Vegetables such as carrots, peas, and bell peppers can add color, flavor, and nutrients to the couscous.
  • Use a flavorful broth: The broth you use to cook the couscous will greatly affect the flavor of the dish. Try using a vegetable broth, chicken broth, or beef broth.
  • Season the couscous well: Don't forget to season the couscous with salt, pepper, and other spices to taste.

Conclusion:

Spiced beef patties with couscous is a delicious and easy-to-make dish that is perfect for a weeknight meal. The beef patties are flavorful and juicy, while the couscous is fluffy and light. This dish is sure to please everyone at the table.
