These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

1 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch ground cloves
½ cup softened butter
1 cup packed brown sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
  • Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
  • Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

2 cups molasses
1 cup butter, melted
1 cup sour cream
1 tablespoon lemon juice
8 cups all-purpose flour
1 cup packed brown sugar
3 teaspoons each ground cinnamon, nutmeg and cloves
2-1/4 teaspoons baking soda
1 teaspoon grated lemon zest
3/4 teaspoon salt
3 cups chopped walnuts
1-2/3 cups raisins
1/4 cup chopped candied lemon peel
1/4 cup chopped candied orange peel
FROSTING:
4-1/2 cups confectioners' sugar
1 cup heavy whipping cream
2 tablespoons lemon juice
GARNISH:
4 cups red and/or green candied cherries, cut as desired

Steps:

  • In a very large bowl, beat the molasses, butter, sour cream and lemon juice until well blended. Combine the flour, brown sugar, spices, baking soda, lemon zest and salt; gradually add to butter mixture and mix well. Stir in the walnuts, raisins and candied peels. Cover and refrigerate until easy to handle, about 30 minutes., Divide dough into 4 portions. On a lightly floured surface, roll out each portion to 1/4-in. thickness. Cut with a floured 2-1/4-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 350° until bottoms are lightly browned, 10-12 minutes. Cookies:
2 1/3 cups flour
1 teaspoon baking soda
1 teaspoon McCormick® Cinnamon, Ground
1/4 teaspoon McCormick® Nutmeg, Ground
1/4 teaspoon salt
1 1/4 cups granulated sugar
1 cup (2 sticks) butter, softened
1 egg
2 teaspoons McCormick® Pure Vanilla Extract
Colorful Cookie Icing:
1 cup confectioners' sugar
3 to 4 teaspoons milk
1/2 teaspoon McCormick® Pure Vanilla Extract
3 to 4 drops McCormick® Assorted Food Colors & Egg Dye

Steps:

  • 1. Mix flour, baking soda, cinnamon, nutmeg and salt in medium bowl. Set aside. Beat granulated sugar and butter in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate dough 2 hours or overnight until firm.
  • 2. Preheat oven to 375 degrees F. Roll out dough on lightly floured surface* to 1/8-inch thickness. Cut into shapes with favorite cookie cutters. Place on greased baking sheets.
  • 3. Bake 8 to 10 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
  • 4. For the Icing, mix all ingredients except food colors. (Stir in additional milk to thin icing or more confectioners' sugar to thicken, if needed). Place small amount of icing into small shallow bowls, using one bowl for each color desired. Stir drops of food color into icing until desired shade is reached.
  • 5. To ice cookies, hold cookie by its edge and dip top of cookie into icing. (Or spoon the icing onto cookie using a teaspoon.) Place iced cookies on wire rack set over foil-covered baking sheet to dry. (The foil-covered baking sheet will catch drips.) To add decorative details to cookies, spoon tinted icing into resealable plastic bag. Snip off a tiny piece of the corner. Squeeze icing through hole in plastic bag to decorate cookies. 1 cup (2 sticks) unsalted butter, cut into pieces, chilled
1/2 cup granulated sugar
1/4 cup (packed) light brown sugar
2 large egg yolks
2 teaspoons vanilla extract
1 teaspoon kosher salt
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cardamom, cloves, or nutmeg
1/4 teaspoon baking powder
2 cups plus 2 tablespoons all-purpose flour, plus more for surface
Colored sanding sugars or royal icing (optional; for decorating)

Steps:

  • Process butter in a food processor until smooth. Add granulated sugar and brown sugar and process until thoroughly blended into butter, about 1 minute. Add egg yolks and vanilla; process until mixture is smooth and looks glossy, about 30 seconds. Add salt, cinnamon, ginger, cardamom, baking powder, and 2 cups plus 2 Tbsp. flour; pulse until dough comes together around the blade. Turn out onto a work surface and knead a couple of times to incorporate any floury bits. Divide dough in half; pat into two 1/2"-thick disks. Wrap in plastic and chill until firm, 45-60 minutes.
  • Let dough sit 5 minutes at room temperature to soften slightly.
  • Preheat oven to 350°F. Working with 1 disk at a time, roll out dough on a lightly floured surface to 1/4" thick. Punch out cookies with cookie cutters and transfer to parchment-lined baking sheets, spacing at least 1" apart. Sprinkle with sanding sugar, if using, and press in lightly to adhere. Gather up scraps and reroll once. Chill cookies on baking sheets until firm, 5-10 minutes, then bake until edges are golden brown, 12-18 minutes. Let cool 5 minutes on baking sheet; transfer to a wire rack and let cool completely.
  • If using royal icing, decorate cooled cookies and let dry 2 hours.

  • Dough can be made 1 month ahead; freeze instead of chilling. Cookies can be baked 2 weeks ahead (do not decorate with royal icing); place in airtight container and freeze.

½ cup vegetable oil
2 teaspoons ground ginger

Steps:

  • Sieve the flour, spices and salt together into a bowl and set aside. Cream the butter and sugar together until fluffy, then add the honey and beaten egg. Stir to fully combine. Sift in the dry ingredients in a few batches. The mixture will be a bit stiff but still soft and not dry.
  • Divide the dough into two batches and wrap the halves in cling film. Refrigerate overnight or for at least 3-4 hours.
  • Preheat the oven to 170°C. Line several large baking trays with greaseproof paper, or if they are non-stick simply butter them and set aside.
  • Lightly flour the work surface, then roll out one half of the dough. Stamp out festive trees using a tree-shaped cutter. Lay on the baking sheets with spaces between them, then add on the smarties or other coloured beans.
  • When you have stamped out enough to fill the tray, place in the oven and bake for 8 - 10 minutes. They want to be golden in colour but still fairly soft as they harden up a little after cooking. Repeat this process until all the mixture has been used up. Remove from the oven and cool on a wire rack.

1 1/2 cups sugar
1 tablespoon dark molasses
1 egg, slightly beaten
2 teaspoons baking soda
1 tablespoon cinnamon

3 1/4 cups unbleached all-purpose flour

Steps:

  • Cream sugar and butter.
  • Add syrup and egg.
  • Mix well.
  • Sift dry ingredients and add.
  • (Optional) I grind the cinnamon sticks and the cloves.

  • Roll into "log" and chill.

It's been 50 years since I've had them as no bakery seems to make them. Finally, after much research, I was able to locate a recipe that sounded just like the real thing. I tweaked the recipe a bit till I got the taste that I remembered. Warning: You can't each just one.

4 cups all-purpose flour
3 teaspoons baking powder
1/2 cup dark unsweetened cocoa
2 teaspoons ground cloves

1 1/2 cups sugar
3/4 cup canola oil or 3/4 cup vegetable oil
3 large eggs
1/2 cup milk

1/2 cup almonds, chopped plus sliced for garnish
1/2 cup semi-sweet chocolate chips
2 cups powdered sugar, sifted
2 tablespoons baking cocoa
3 -4 tablespoons water
1 tablespoon butter, melted
2 teaspoons vanilla
1 cup powdered sugar (to garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Line two baking sheets with parchment paper.
  • Whisk together flour, baking powder, salt, cocoa, cloves, cinnamon, allspice and nutmeg.
  • In a large separate bowl mix together eggs, sugar, oil, milk and vanilla.
  • Add flour mixture to wet mixture in small batches and mix until combined.
  • Add chocolate chips and chopped almonds. Dough will be very stiff.
  • With lightly oiled hands, continue to mix the dough till all ingredients are incorporated. Wash hands thoroughly.
  • Lightly oil your hands again so the dough won't stick to them and break off pieces of dough, rolling them with your palms into balls the size of walnuts.
  • Arrange on prepared baking sheet 2" apart and bake for 10 minutes.
  • Once cooled, dip the top of each cookie into the chocolate glaze. While still wet garnish tops with a few sliced almonds.
  • When set, re-dip the bottom of each cookie back into the chocolate glaze and let set again.
  • While still slightly wet, generously dust or roll each cookie into 1 cup powdered sugar.
  • Set aside to dry before stacking.
  • Cookies will keep in an airtight container for 2 weeks.
