Spiced Eggs with Tzatziki image

Preground curry powder can go musty quickly. If your jar isn't fresh, replace it for the sake of these buttery, fast-scrambled eggs.

2 tsp. cumin seeds
1 Tbsp. flaky sea salt
2 tsp. Aleppo-style pepper
1 cup plain whole-milk yogurt
½ cup finely chopped English hothouse cucumber
1 garlic clove, finely grated
1 Tbsp. finely chopped mint, plus leaves for serving
1¾ tsp. kosher salt, divided
8 large eggs
¼ cup heavy cream
4 Tbsp. unsalted butter
2 tsp. curry powder
Parsley leaves with tender stems and dill sprigs (for serving)

Steps:

  • Toast cumin in a dry small skillet over medium heat, tossing, until slightly darkened and fragrant, about 2 minutes. Transfer to a small bowl; let cool. Mix in sea salt and Aleppo-style pepper; set aside.
  • Mix yogurt, cucumber, garlic, chopped mint, and ¾ tsp. kosher salt in a medium bowl; set tzatziki aside.
  • Whisk eggs, cream, and remaining 1 tsp. kosher salt in another medium bowl until very well combined. Heat butter in a medium nonstick skillet over medium until starting to foam. Add curry powder and cook, stirring, until fragrant and darkened in color, about 10 seconds. Pour in egg mixture and let eggs cook, undisturbed, until edges have just set, then scramble, tilting pan and turning eggs over onto themselves, until just cooked through, about 2 minutes.
  • Transfer eggs to a plate. Spoon reserved tzatziki alongside. Top with mint leaves, parsley leaves, and dill sprigs; sprinkle reserved spice mixture over.
  • Do Ahead: Tzatziki (without mint and cucumber) can be made 1 week ahead (the garlic flavor will intensify as it sits). Cover and chill.

Greek yogurt's thicker texture eliminates the need to drain yogurt in cheesecloth as most commonly seen in tzatziki recipes. Wringing out the moisture from your cucumber ensures that the tzatziki stays thick and creamy. We chose fresh dill and mint over dried to provide the brightest flavor possible.

1 medium English cucumber
1 cup whole milk Greek yogurt
2 cloves garlic, grated
Juice of 1 lemon, about 3 tablespoons
1 tablespoon olive oil, plus more for drizzling
Kosher salt
1/4 cup fresh dill, chopped
2 tablespoons fresh mint, finely chopped

Steps:

  • Line a strainer with a clean kitchen towel and place over a bowl. Grate the cucumber on the large holes of a box grater. Sprinkle 1 teaspoon of salt over the cucumbers and toss together by hand. Put the salted cucumber into the towel lined strainer and let sit for 10 minutes. Use the kitchen towel to squeeze out any remaining moisture.
  • Stir the cucumber, Greek yogurt, garlic, lemon juice, olive oil, and 1/4 teaspoon salt together in a medium bowl until combined. Gently fold in the dill and mint. Serve drizzled with more olive oil.

1 pound (1 pint) plain yogurt (whole milk or low fat)
1 hothouse cucumber, unpeeled and seeded
1 tablespoon plus 1/2 teaspoon kosher salt
1/2 cup sour cream
1 tablespoon Champagne vinegar or white wine vinegar
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 tablespoon good olive oil
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh dill
Pinch freshly ground black pepper

Steps:

  • Place the yogurt in a cheesecloth or paper towel-lined sieve and set it over a bowl. Grate the cucumber and toss it with 1 tablespoon of kosher salt; place it in another sieve, and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.
  • Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumber as you can and add the cucumber to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1/2 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. Serve chilled or at room temperature.

1 large cucumber, peeled and finely chopped
⅓ cup freshly squeezed lemon juice
2 tablespoons garlic powder
1 tablespoon white sugar
1 teaspoon lemon zest
8 leaves fresh mint, finely chopped, or more to taste
1 teaspoon chopped fresh dill
2 whole jalapeno peppers
½ bunch parsley
1 bunch green onions, root ends removed
4 cloves peeled garlic
3 (16 ounce) cans chickpeas - rinsed, drained, and dried
2 eggs
½ cup freshly squeezed lemon juice
1 tablespoon lemon zest
1 tablespoon Greek seasoning
1 tablespoon ground cumin
1 tablespoon salt, divided
½ tablespoon smoked paprika
½ tablespoon ground black pepper
½ tablespoon chile powder
1 cup chickpea flour
½ cup olive oil, divided

Steps:

  • Stir yogurt, cucumber, lemon juice, garlic powder, sugar, lemon zest, mint, and dill together in a bowl. Adjust seasonings to taste and refrigerate tzatziki until ready to serve with falafel.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine jalapeno peppers, parsley, green onions, and garlic in a food processor. Pulse until finely chopped and fully blended. Scrape mixture down and add chickpeas. Pulse several times until just blended and chickpeas are broken up, but texture is still rough; do not overblend. Transfer mixture to a large bowl.
  • Add eggs, lemon juice, lemon zest, Greek seasoning, cumin, 1/2 tablespoon salt, paprika, pepper, and chili powder to the chickpea mixture. Stir with a spatula until fully incorporated. Add chickpea flour a few tablespoons at a time and stir; the final mixture should be wet, but not falling apart when handled. Place bowl in the freezer, uncovered, to firm up mixture, 10 to 15 minutes.
  • Line a rimmed baking sheet with parchment paper and brush with some olive oil.
  • Remove chickpea mixture from freezer and form into 20 to 24 small balls and place on the prepared baking sheet. Brush falafel with remaining olive oil and sprinkle with remaining salt.
  • Bake in the preheated oven until falafel are dry and slightly darker brown in color, about 45 minutes. Turn on the broiler and continue baking until tops are crisp, 5 to 7 minutes. Serve with tzatziki.

1 (32 ounce) container plain yogurt
2 cucumbers
1 medium head garlic
¼ cup extra virgin olive oil
3 tablespoons lemon juice
1 teaspoon chopped fresh dill weed
salt and pepper to taste

Steps:

  • Place the yogurt in a large square of double cheesecloth. Tie the cheesecloth at the top and let any excess liquid drain for about 4 hours.n
  • Peel cucumbers; remove seeds with a spoon. Shred the cucumbers, then squeeze to drain excess liquid.n
