SPICED TOMATO DRINK

Spiced Tomato Drink image

This is from Taste of Homes Light & Tasty 2003 cookbook which I received in the 2011 Cookbook Swap from BusyMomof3. The feature I like about these recipes are the give the diabetic exchanges with each recipe. For this one a serve of 3/4 cup is equivalent to 1 vegetable and 1/2 starch and if you wish to lower the sodium they advise to use reduced-sodium tomato juice and skip the salt in the recipe. They also say that you can drink it warm or chilled. I would suggest serving with a stick of celery which will alter the exchange amount.

SPICED MARINATED TOMATOES

Spiced Marinated Tomatoes image

We loved this flavorful summer recipe from the latest issue of Cooking Light. It can be prepared up to two days in advance--the tomatoes will take on more flavor the longer they marinate. I used grape tomatoes, rather than cherry, and substituted white wine vinegar for the white balsamic. If you prefer a milder heat, you will want to seed the pepper.

SPICED TOMATO JAM

Spiced Tomato Jam image

Serve this savory spiced tomato jam on your favorite burger, grilled cheese, or as an appetizer on crusty bread. Store remaining jam in the fridge for up to one week.

Provided by Leah Phillips

Time 13h20m

Yield 14

Number Of Ingredients 8

2 pounds tomatoes, diced
1 red onion, finely chopped
1 cup brown sugar
1 ½ teaspoons red pepper flakes
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 lemon, juiced

Steps:

  • Inspect jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine tomatoes, onion, brown sugar, pepper flakes, cumin, coriander, salt, and lemon juice in a saucepan. Bring to a boil over medium-high heat. Cook, stirring frequently, about 15 minutes. Reduce heat to medium and simmer until reduced and it reaches a jam-like consistency, 20 to 30 minutes. Set aside to cool.
  • Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 15 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Tips:

  • Select ripe, flavorful tomatoes: Choose tomatoes that are deeply colored and free of blemishes. Heirloom or Roma tomatoes are excellent choices for their rich flavor.
  • Simmer for depth of flavor: Allow the tomato mixture to simmer for at least 30 minutes, or up to an hour. This will help concentrate the flavors and develop a rich, complex taste.
  • Adjust the spices to your liking: The amount of spices called for in the recipes can be adjusted to suit your personal preferences. If you prefer a milder flavor, use less spice. For a more intense flavor, add more.
  • Serve hot or cold: Spiced tomato beverages can be enjoyed hot or cold. If serving cold, chill the beverage for at least an hour before serving.
  • Garnish with fresh herbs or spices: When serving, garnish the beverage with fresh herbs such as cilantro, basil, or mint. You can also add a sprinkle of ground black pepper or cayenne pepper for an extra kick.

Conclusion:

Spiced tomato beverages are a refreshing and flavorful way to enjoy the goodness of tomatoes. With their vibrant color, tangy flavor, and aromatic spices, these beverages are perfect for any occasion. Whether you prefer a hot or cold beverage, there is a spiced tomato recipe out there to suit your taste. So experiment with different spices and find your favorite combination.
