AFRICAN YAM STEW

African Yam Stew image

I made this last night and it was great! Very simple and very good for you. I tasted it before adding the lemon juice and I think that I liked it better without, but the recipe (from a nutrition book - Becoming Vegetarian) called for it, so I've included it below. I added some cooked tomatoes at the same time as the yams. I used 2 very rounded teaspoons of some Chinese Chili Garlic sauce I had in the fridge. I ate it with a dolop of yogurt. Nothing else needed, it's a complete meal. My boyfriend ate it with Pita though. I can't wait for the leftovers tonight :-)

AFRICAN SWEET POTATO STEW

African Sweet Potato Stew image

I came across an African sweet potato stew recipe a few years ago, and adapted it to suit our taste. It is very flavorful and just a bit spicy - just right for cold days! This recipe makes a lot of stew, so it may be halved for a smaller portion, but also freezes very well.

Cayenne pepper and Scotch bonnet chillies give this boldly flavoured peanut casserole a fiery kick

Provided by Sara Buenfeld

Categories     Dinner, Main course

Time 1h20m

Number Of Ingredients 16

500ml chicken stock , heated
340g jar smooth peanut butter
2 onions , halved and thinly sliced
3 tbsp sunflower oil
3 tbsp finely chopped ginger
½-1 tsp cayenne pepper (optional)
3 tsp ground coriander
3 tsp ground cumin
1-2 scotch bonnet chillies, deseeded and chopped
2 bay leaves
400g can chopped tomato
2 x 800g pack chicken thighs and drumsticks, skinned
3 sweet potatoes , cut into chunks
2 red peppers , deseeded and cut into chunks
good handful coriander , chopped, a little reserved for sprinkling
rice and lime wedges, to serve (optional)

Steps:

  • Pour the hot stock over the peanut butter and stir until dissolved. Heat a very large pan and fry the onions in the oil for 5 mins to soften. Add the ginger, cayenne, if using, ½ tsp black pepper, coriander, cumin, chillies and bay and cook, stirring, for 2 mins.
  • Tip in the tomatoes and the peanut stock, then stir in the chicken pieces. Put a lid on the pan and leave to simmer for 30 mins, stirring frequently to make sure the peanut butter doesn't stick to the base of the pan.
  • Stir in the sweet potatoes, peppers and chopped coriander, then cook for 30 mins more. Serve sprinkled with the reserved coriander, with rice and lime wedges for squeezing over, if you like.

Tips:

  • Choose the Right Yams: Select firm and plump yams with smooth skin. Avoid yams with blemishes or bruises.
  • Peel and Cut Yams Properly: Peel the yams carefully to avoid wasting the flesh. Cut yams into large chunks for a stew-like texture or into smaller pieces for a more soup-like consistency.
  • Use a Variety of Spices: Don't be afraid to experiment with different spices to create a unique flavor profile. Common spices used in African yam stew include cumin, paprika, cayenne pepper, ginger, and garlic.
  • Simmer the Stew Slowly: Allow the stew to simmer slowly over low heat for at least 30 minutes, or until the yams are tender. This will help develop the flavors and create a rich, thick sauce.
  • Add Vegetables and Protein: Feel free to add other vegetables and protein sources to the stew, such as tomatoes, bell peppers, spinach, or chicken. This will make the stew more hearty and nutritious.

Conclusion:

Spicy African yam stew is a flavorful and versatile dish that can be enjoyed as a main course or as a side dish. With its vibrant colors and bold flavors, this stew is sure to be a hit at your next gathering. So, gather your ingredients, put on your apron, and let's get cooking!
