1/4 cup rice vinegar (not seasoned)
1/4 cup packed light brown sugar
1 tablespoon Sriracha (Asian chile sauce)
3 cloves garlic, grated
1 1/2 pounds beef tri-tip, cut into 1-inch cubes
1 onion, cut into 1-inch wedges
Vegetable oil, for brushing
4 scallions, cut into 1-inch pieces

Steps:

  • Combine the soy sauce, vinegar, brown sugar, Sriracha and garlic in a large bowl. Add the beef and onion and toss to coat; cover and refrigerate 1 to 4 hours.

1/4 cup light brown sugar
1 tablespoon chili sauce, Siracha
2 cloves garlic, minced

1 1/2 to 2 pounds boneless beef sirloin
3 cloves garlic, minced
2 teaspoons smoked paprika
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup red wine vinegar
1/2 cup olive oil
Special equipment: 4 (12-inch) metal skewers

Steps:

  • Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl. Set aside.
  • In the bowl of a food processor combine the garlic, paprika, turmeric, cumin, salt, pepper and red wine vinegar. With the processor running drizzle in the olive oil.
  • Pour the marinade over the meat and toss to coat. Place in the refrigerator in an airtight container or a sealable plastic bag and allow to marinate for 2 to 4 hours.
  • Preheat the grill to medium-high heat. Thread the meat onto the skewers leaving about 1/2-inch in between the pieces of meat. Place on the grill and cook, with lid lowered, 2 to 3 minutes per side, 8 to 12 minutes in all (8 minutes for rare and 12 for medium). These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

2 tablespoons honey
1 tablespoon lime juice

Steps:

  • combine all the marinade ingredients in a bowl and stir with a fork until combined.
  • take the beef, and with the back of a large knife, tenderize untill it is about 1cm thick. then slice the beef into 5cm long strips.
  • place the beef into a sandwich bag, and pour over the marinade. place the bag in the fridge and leave to marinade overnight (this step can be reduced down to 20 minutes if you dont have time, but it is better after marinating overnight.)
  • approx 1 hour before cooking, place bamboo skewers in a shallow tray, and cover with one hour, to avoid burning during the cooking process.
  • preheat your oven to 170c/fan 150c/gas 5 and slice the onion into thick wedges (aprox 12 wedges) and separate each wedge in half. (so you should end up with 24 chunks of onion).
  • take the marinading beef out of the freezer and thread onto the soaked skewers, alternating with the chunks of onion.
  • once all of the onion and beef has been used, brush the onion with the remaining marinade sauce and sprinkle with chili flakes. place the kebabs on a tray and bake in the oven for 20 minutes, turning half way through the cooking process.
  • check that the beef is cooked by cutting into one of the strips. once the kebab is cooked, remove from the oven, and serve immediately.

1/4 cup chopped cilantro
1/4 cup minced red onions or 1/4 cup shallot
1/3 cup teriyaki sauce

salt and black pepper
4 boneless skinless chicken breasts, cut into 1 inch chunks (approx. 1 1/2-2 lbs)
1 green pepper, cut into 1 inch pieces
1 red onion, cut into quarters
1 1/2 cups fresh pineapple, cut into 1/2-3/4 inch chunks
6 bamboo skewers that have been soaked in water
1 (10 ounce) jar red pepper jelly
1/2 cup pineapple juice

  • To prepare the marinade:.
  • Mix all of the marinade ingredients together. Pour into a large plastic storage bag. Add the chicken and place into the fridge to marinate for at least 3 hours, overnight is ideal.
  • To prepare the kabobs:.
  • When you're ready to prepare the kabobs, remove the chicken from the marinade. Alternate the peppers, chicken, pineapple and onion chunks onto the skewers. Season everything lightly with salt and pepper. Oil the grill grates and heat the grill to medium-high heat. Cook the kabobs rotating as needed so they will cook evenly. About 4 minutes on all sides. You want the kabobs to char, but, not burn. A few minutes before removing from the grill, reduce the heat to medium and begin to baste the kabobs with the glaze until they are lightly charred It will take the kabobs around 16-18 minutes {maybe less} in total cooking time depending on the size of the chicken pieces.
  • Warm the glaze slightly in the microwave just until the jelly has melted so it will be easier to brush onto the kabobs. Using a pastry brush baste the kabobs with the glaze at the end of grilling.
  • Serve hot over rice pilaf.

2 limes
2 -4 tablespoons sriracha hot chili sauce
1/3 cup rice vinegar
2 teaspoons chopped garlic
1 (8 ounce) container sour cream
1 (12 ounce) can coconut milk
1 lb chicken, cubed
1 lb boneless beef top sirloin steak, cubed
2 green bell peppers, cubed
2 red bell peppers, cubed
1 large onion, cubed
1 (8 ounce) jar plum sauce
2 limes, juiced
1 -2 teaspoon garlic (or to taste)
1 -2 tablespoon rice vinegar

  • 1. Soak skewers overnight.
