SPICY PEPPER APPLE CHUTNEY RECIPE - (3.5/5)
Provided by HotDishHomemaker

Steps:
- 1. Peel and core the Apples. Dice the Apples. You should get about 7 to 8 Cups diced. Put the Apples in a large pot with a lid or dutch oven. 2. Dice the Peppers and add them to the pot, seeds and all! I used 10 Biker Billy Peppers because of their size, which you can see here so compare the Peppers you have on hand with this to determine how many you should add. 3. Next Dice up the Onion and also add it to the pot. Then add all the remaining ingredients to the pot. 4. Over a medium high flame, cook and stir the Chutney until it comes to a boil. 5. Cover the pot and turn the flame down to the lowest setting. This is where the flavors will start to marry and the Apples and Peppers will start to soften and break down releasing all their flavor. It will take about an hour and 20 minutes for this to start happening. Once you see that taking place get out a potato masher and start mashing. Replace the lid and continue to cook for about another half an hour. Check the Chutney about every 10 minutes and give it another mashing. 6. Here is the consistency you are looking for when the Chutney is done. 7. Allow the Chutney to cool then place it in glass jars with tight fitting lids. Store in your refrigerator for up to 5 days. SPICY PLUM & APPLE CHUTNEY
This multi-purpose chutney can add zing to sandwiches or makes a great dip for poppadums

Yield Makes 4-5 jars

Steps:
- To sterilise the jars: run them with the lids and any rubber seals through the hottest cycle of your dishwasher. If you don't have a dishwasher, give the jars a good wash, then heat them in the oven at 150C/130C fan/ gas 2 for 30 mins. Don't bake seals - boil them in a pan of water for 10 mins. If you don't have lids you can buy jam pot covers from cook shops which you can then cover with fabric.
- Prepare the ingredients: first, peel the garlic cloves and cut them into slivers. Peel and thinly shred the ginger. Halve, peel and thinly slice the onions, then put them in a large, wide saucepan or a preserving pan with the garlic and ginger. Peel, core and chop the apples, then add to the pan with the spices, vinegar and salt.
- Bring the pan to the boil over a gentle heat, give everything a good stir, then turn down the heat and cover the pan (if you don't have a lid use foil). Simmer for 30 mins until the apples are cooked and pulpy.
- While the apples are simmering, stone and quarter the plums, then add them to the cooked apples with the sugar. Stir well and leave to bubble away, this time uncovered, for another 40 mins stirring regularly until the plums are cooked but still retain some of their shape. Ladle into the sterilised jars, seal and label. Use our downloadable Christmas labels if you like.
- This chutney is best kept for about a month before eating as the vinegar needs a bit of time to mellow. If you don't want the flavour of the spices to develop any more, then take out the cinnamon and star anise before potting. It will keep for 1 year in a cool place but once opened store in the fridge and use within a month.

Tips:
- Choose the right apples: Use a firm, tart apple variety like Granny Smith or Braeburn. These apples will hold their shape well and provide a nice contrast to the sweetness of the chutney.
- Use fresh, high-quality ingredients: The fresher your ingredients, the better your chutney will taste. Look for firm, ripe apples and onions, and use fresh spices.
- Don't overcook the chutney: Chutney should be cooked until it is thick and syrupy, but not so long that it becomes too thick and jammy. Overcooked chutney will lose its bright flavor and color.
- Sterilize your jars and lids: This will help to prevent bacteria from growing in your chutney and ensure that it lasts for a long time.
- Store the chutney in a cool, dark place: Chutney will keep for several months in a cool, dark place. Once you open a jar of chutney, store it in the refrigerator.
Conclusion:
Spicy apple and onion chutney is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for serving with grilled meats, fish, or poultry, or as a topping for sandwiches, wraps, and salads. With its sweet, spicy, and tangy flavor, this chutney is sure to become a favorite in your kitchen.
