Provided by Erin Renouf Mylroie

Categories     Pasta     Side     Kid-Friendly     Quick & Easy     Back to School     Peanut     Pea     Bell Pepper     Summer     Bon Appétit     California     Small Plates

Yield Serves 6

Number Of Ingredients 11

1 pound linguine, broken in half
4 tablespoons oriental sesame oil
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
3 red bell peppers, seeded, thinly sliced
3 cups snow peas
1 large red onion, thinly sliced
3/4 cup honey-roasted peanuts, coarsely chopped
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
  • Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.

Tips:

  • Choose the right pasta. Short, sturdy pastas like penne, rotini, or fusilli are ideal for this salad because they can hold up to the dressing and vegetables.
  • Cook the pasta al dente. This means cooking it until it is just tender but still has a slight bite to it. This will help the pasta to hold its shape and not get mushy in the salad.
  • Use a flavorful dressing. The dressing is what really makes this salad special. Be sure to use a dressing that is flavorful and has a good balance of sweet, sour, and salty flavors.
  • Add plenty of vegetables. Vegetables add color, crunch, and nutrition to this salad. Be sure to use a variety of vegetables, such as bell peppers, cucumbers, carrots, and tomatoes.
  • Don't be afraid to experiment. This salad is very versatile, so feel free to add or remove ingredients to suit your taste. For example, you could add grilled chicken, shrimp, or tofu for a protein boost.

Conclusion:

Spicy Asian-style pasta salad is a delicious and easy-to-make dish that is perfect for a summer cookout or potluck. It is also a great way to use up leftover pasta. With its vibrant colors and bold flavors, this salad is sure to be a hit with everyone who tries it.
