FANTASTIC HOT 'N' SPICY WINGS
This is the BEST recipe for hot wings and I have tried many others over the years ---I make these quite often for my parties and everyone loves them --- you may double all ingredients if desired, if you are doubling the ingredients, I suggest to just start with 2 tablespoons hot sauce such as Louisiana hot sauce then add more to reach the desired heat --- I have even prepared these on the grill instead of the broiler and then finished cooking them in the oven with the sauce, another idea is you may cook the wings hours in advance or even a day ahead cool slightly and just leave them in the fridge overnight, then the following day just coat them in the hot sauce and then bake them in the oven, you may even prepare the hot sauce a day ahead in fact it tastes even better if prepared in advance just refrigerate overnight, preparing the wings and the sauce in advance is a great time saver if you are making them for a crowd,

Tips:
- Choose the Right Wings: Select large and plump wings for better meat-to-bone ratio. Fresh or thawed wings work best.
- Properly Clean and Dry the Wings: Remove any excess fat or feathers from the wings. Pat them dry with paper towels to ensure crispy skin.
- Season Generously: Use a combination of spices and herbs to create a flavorful coating for the wings. Paprika, garlic powder, onion powder, salt, and black pepper are all great options.
- Use a Buttermilk Marinade: Buttermilk helps tenderize the wings and adds a tangy flavor. Marinate the wings for at least 30 minutes, or up to overnight.
- Double Coat the Wings: First, coat the wings in a mixture of flour, cornstarch, and baking powder. Then, dip them in the buttermilk marinade. Finally, coat them again in the flour mixture. This double coating ensures extra crispy wings.
- Fry the Wings at the Correct Temperature: Maintain a consistent oil temperature between 350°F and 375°F. Use a deep fryer or a large pot with a wire rack to prevent the wings from sticking together.
- Cook the Wings in Batches: Avoid overcrowding the pot or fryer. Cook the wings in small batches to ensure even cooking and crispy skin.
- Drain the Wings Properly: After frying, transfer the wings to a paper towel-lined plate to drain excess oil.
- Make the Spicy Butterscotch Sauce: Combine melted butter, brown sugar, cayenne pepper, garlic powder, onion powder, and salt in a saucepan. Bring to a simmer and stir until thickened.
- Toss the Wings in the Sauce: While the wings are still hot, toss them in the spicy butterscotch sauce to coat evenly.
