Categories     Vegetable

Time 25m

Yield 2 serving(s)

Number Of Ingredients 11

1/2 lb fresh green beans
2 tablespoons soy sauce
1 tablespoon water
1 tablespoon dry sherry
1 teaspoon sugar
1/2 teaspoon cornstarch
1/8 teaspoon ground red pepper (or red chili flakes)
1 teaspoon fresh ginger, minced
1/2 teaspoon fresh garlic, minced
2 tablespoons peanut oil
sesame oil

Steps:

  • Wash beans; trim ends, and remove strings. Slice beans in half lengthwise, and set aside.
  • Combine soy sauce and next 5 ingredients, stirring until smooth. Set aside.
  • Cook ginger and garlic in hot peanut oil in a large skillet over medium-high heat for 30 seconds, stirring constantly. Add beans and cook 3 minutes, stirring constantly. Stir soy sauce mixture, and add to beans; cook stirring constantly, 1 minute or until mixture thickens. Remove from heat, and sprinkle with a few drops of sesame oil. Serve immediately.

Tips:

  • Use fresh green beans: Fresh green beans are more flavorful and have a better texture than frozen or canned beans.
  • Trim the green beans properly: Trim the ends of the green beans, but leave the strings intact. This will help the beans to stay crisp during cooking.
  • Blanch the green beans before stir-frying: Blanching the green beans in boiling water for a few minutes will help to preserve their color and crispness.
  • Use a hot wok or skillet: A hot wok or skillet will help to sear the green beans and prevent them from becoming soggy.
  • Add the sauce to the green beans at the end of cooking: This will help to prevent the sauce from burning.
  • Serve the green beans immediately: Green beans are best served immediately after they are cooked.

Conclusion:

Spicy Chinese green beans are a delicious and easy-to-make dish that is perfect for a quick and healthy meal. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that the whole family will enjoy.
