2 ears fresh corn, kernels cut from cob
1 cup dry white wine (such as Pinot Grigio)
2 cups water
1 tablespoon olive oil
1 red onion, diced
2 cloves garlic, minced
1 yellow bell pepper, diced
1 red bell pepper, diced
½ small jalapeno pepper, seeded and minced
1 quart soy milk
2 tablespoons chopped fresh oregano
½ cup chipotle salsa
3 tablespoons cornstarch
⅓ cup cool water
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon grated orange zest
garlic powder, or to taste
salt and cracked black pepper to taste

Steps:

  • Place the shoepeg corn and fresh corn into a large pot with the wine and water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the onions, garlic, yellow bell pepper, red bell pepper, and jalapeno pepper. Cook and stir until the vegetables have softened and the onion has turned translucent, about 10 minutes.
  • Stir the pepper mixture into the pot with the corn along with the soy milk, oregano, and chipotle salsa.   • In 4-quart Dutch oven, heat oil over medium-high heat. Cook onions and poblano chiles in oil 5 to 7 minutes, stirring occasionally, until tender. 4 pieces thick-sliced bacon, chopped
1 medium vidalia onion, finely chopped
1 medium red bell pepper, chopped
salt & freshly ground black pepper
1 small jalapeno, chopped seeds and ribs removed
3 garlic cloves, finely chopped
1/4 cup all-purpose flour
4 cups chicken stock
2 large red potatoes, well scrubbed and small diced
1 cup heavy cream
16 ounces frozen corn
1/4 teaspoon cayenne pepper
1 bay leaf

Steps:

  • In a small saucepan over medium heat, saute the bacon until crisp and browned and the fat is rendered. With a slotted spoon, transfer bacon to paper towel and reserve. There should be about 4 tablespoons of bacon grease in pan.
  • Add the onions and red pepper to pan. Saute until tender and translucent, about 4 minutes. Season with salt and pepper, to taste.
  • Add the jalapeno and garlic and saute until fragrant, about 1 minute.
  • Stir in the flour until thoroughly combined. Cook the flour until it reaches a slight blonde color, about 1 minute.
  • Stir in the chicken stock and the potatoes and simmer for 10 minutes; potatoes will become soft.
  • Add the cream, corn, cayenne and bay leaf. Simmer for 15 more minutes. Pour into a serving bowl and garnish with the reserved bacon.

3 to 4 small ribs celery with leafy tops, chopped
2 fresh bay leaves
2 jalapeno or Fresno chiles, chopped or thinly sliced
1 red onion, chopped
4 cups chicken stock
3 to 4 heirloom tomatoes, chopped
4 pounds littleneck clams, scrubbed
1 lager beer
Sea salt and freshly ground pepper
Hot sauce, for serving
3 English muffins, chopped into bite-size cubes
1/2 stick butter (4 tablespoons)
2 tablespoons hot sauce
2 tablespoons fresh flat-leaf parsley, finely chopped
1 teaspoon seafood seasoning, such as Old Bay

Steps:

  • Preheat the oven to 350 degrees F.
  • For the chowder: In a soup pot or a Dutch oven, heat the EVOO over medium-high heat. Add the bacon and cook until crisp, about 5 minutes. Add the corn and cook until the kernels are lightly browned at the edges, 6 to 8 minutes. Add the seafood seasoning, thyme, garlic, celery, bay leaves, chiles and onions, and cook until softened, 6 to 8 minutes. Stir in the chicken stock and tomatoes.   • For the croutons: Arrange the English muffin cubes on a wire rack set over a baking sheet. Toast in the oven until light golden. Melt the butter with the hot sauce. Place the croutons in a bowl and toss with the parsley, seafood seasoning and the butter mixture. Return to the rack set over the baking sheet and bake until deeply golden. Let cool.
  • To finish the chowder: Place the clams and beer in a large pot with a tight-fitting lid, and season with sea salt and pepper. Cover and bring to a boil, then cook at a rapid simmer until the clams open, 3 to 5 minutes. Discard any unopened clams.
  • Divide the clams and the cooking liquid among 4 shallow bowls. Ladle the corn chowder over top and garnish with the croutons. Serve with hot sauce.
  • Cook's Notes: You can make the chowder base up to 5 days ahead. Cool and store in the refrigerator, then reheat over a medium flame. Buy the clams within 48 hours of serving and cook them just before you're ready to serve.

lime, juice and zest of
2 tablespoons corn oil
1 large yellow onion, peeled and minced
1 quart chicken stock, preferrably homemade (I've even seen homemade stock in a select few grocery stores)
2 cups peeled diced russet potatoes
1 teaspoon ground red chili powder
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
1 anaheim chili, stem and pith removed,seeded and chopped
1 cup heavy cream
1/2 cup chopped fresh cilantro, plus
5 sprigs cilantro, tops for garnish
1/2 teaspoon kosher salt
garnish with drained salsa, if desired

Steps:

  • In a mixing bowl, squeeze lime juice over corn and mix in zest with a spoon; set aside.
  • In a large saucepan over medium heat, cook oil and onion until the onion is translucent and softened.

12 ounces chorizo, casing removed
4 cups fresh corn kernels (from about 3 ears) $
2 cups reduced-sodium chicken broth $

1/2 cup finely sliced basil leaves
Sliced avocados
Sliced radishes
Lime wedges

Steps:

  • Preparation 1. Preheat broiler. Oil a rimmed baking sheet. Set chiles on sheet and broil, turning as needed, until blackened all over, about 18 minutes total. Let cool, then peel, remove stem and seeds, and chop; set aside. 2. Cook chorizo in a large saucepan over medium heat, breaking sausage into smaller pieces with a wooden spoon, until meat and fat have separated. Strain through a fine strainer and discard fat. 2 Tbsp olive oil
1/2 medium onion, diced (about 3/4 cup)
1 stalk(s) celery, diced (about 1/3 cup)
2 yellow-skin potatoes, diced (about 2 1/2 cups)
1 pkg 10-oz. pkg. frozen sweet corn (i use organic)
1/2 chipotle chile in adobo sauce, diced (more to suit your taste)
1 bay leaf
2 c low-sodium vegetable broth (or chicken broth if preferred)
1/2 can(s) coconut milk
1 Tbsp fresh parsley, chopped

Steps:

  • 1. Heat oil in large, heavy saucepan over medium heat. Add onion and celery and saute approx. 5 minutes or until soft.
  • 2. Add potatoes, corn, chipotle chile and bay leaf and cook 10 minutes stirring frequestly. Add broth and bring to a boil.
  • 3. Reduce heat to medium-low and simmer 10 minutes or until vegetables are tender. Stir in coconut milk and parsley and season with salt and pepper.

One of my daughter's favorite soups. It is a combination of a few corn chowder receipes I have tried. This one has some heat but not a lot (my daughter likes easy on the spice) It would not be hard to kick up the heat. It is great with some cheesy ciabata bread. Enjoy.

4 slice bacon
1 medium onion
1 red bell pepper, chopped
1 jalapenos, fresh, chopped
3/4 c all purpose flour
4 c chicken stock (1 whole box)
2 medium potatoes
1 c whipping cream
16 oz frozen corn
1/4 tsp cayenne pepper
1 bay leaf

Steps:

  • 1. Cook bacon in a large pan or dutch oven. Set aside cooked bacon for garnish
  • 2. Add onion, pepper, salt, and bell pepper to bacon greased pan.Saute until crisp tender. Then add in your jalapeno and garlic. Simmer.
  • 3. Add flour and cook, stirring, until it is a nice blond color.
  • 4. Add chicken stock and potatoes. Simmer for 10 minutes or until potatoes are tender.
  • 5. Add cream, corn and cayenne. Simmer for 15 minutes.
  • 6. Serve soup garnished with the bacon. A side salad and cheesy garlic bread goes perfect with this soup.
  • 7. Enjoy!
