2 teaspoons minced garlic

2 cups chicken broth
1 (10-ounce) box couscous
Salt and freshly ground black pepper

Steps:

  • Heat oil in a medium saucepan over medium-low heat. Saute garlic with red pepper flakes for 2 minutes being careful not to burn garlic. 1 garlic clove, finely chopped
1 tablespoon ground cumin
1 teaspoon ground coriander

350 ml chicken stock or 350 ml vegetable stock

6 spring onions, trimmed and thinly sliced
225 g couscous
1 lemon, juice and zest of
2 red chili, seeded and finely chopped
50 g pine nuts, toasted

175g couscous
½ tsp each cinnamon , cumin and coriander
300ml vegetable stock
handful cherry tomatoes , halved
250g pack halloumi cheese
½ lemon , juice only

small handful coriander leaves, chopped
