1 lb shrimp or 1 lb chicken, cut up
4 -5 kaffir lime leaves
1/4 cup tomatoes, chopped
1 1/2 cups mushrooms, sliced
3 cups water
1 stalk lemongrass, cut into 1/2-inch pieces
4 -5 tablespoons fish sauce
7 -8 tablespoons lime juice
2 tablespoons red chili peppers, freshly ground (or to taste)
1 tablespoon chili paste, in soy bean oil (Thai name -- Nam Prik Pao, can be found in Asian grocery store)

Steps:

  • Pour water into medium saucepan and place over high head on stove; bring to boil and add Kaffir lime leaves & lemon grass; cook for 2 minutes.
  • Reduce to low heat, add fish sauce, lime juice, fresh ground red chili, and chili paste in soy bean oil.
  • Add mushrooms & tomatoes; cook for several minutes.
  • Add shrimp or chicken.
  • Turn heat to high, do not stir.
  • When shrimp or chicken is cooked, continue to cook for 2 minutes more.
  • Serve with hot rice.

2 pounds tiger prawns with heads and shells
4 cups water
2 tablespoons vegetable oil
1 tablespoon minced garlic
2 stalks fresh lemon grass, tough outer leaves removed and and white part slightly crushed
5 lime leaves
5 shallots, thinly sliced
5 slices galangal
10 chile padi (bird's eye chiles), thinly sliced
1 tablespoon Asian red chili paste
1 skinless, boneless chicken breast half - cut into cubes
¼ cup lime juice
2 large squid, cleaned and sliced into rings
½ (15 ounce) can baby corn, drained
½ (6 ounce) can whole straw mushrooms, drained
3 fresh tomatoes, quartered
½ cup coconut milk
salt to taste

Steps:

  • Wash the prawns, remove the heads, shells, and black veins, and retain the heads. Set the cleaned prawns aside. Place the prawn heads in a large saucepan or soup pot with the water, bring to a boil, and boil over high heat to reduce the stock and concentrate the flavor, about 15 minutes. Strain out the prawn heads and discard.
  • Heat the vegetable oil in a large skillet over medium heat; cook and stir the garlic, lemon grass, lime leaves, shallots, galangal, and red chilies until the shallots are translucent and the seasonings are fragrant, about 3 minutes. 4 cups vegetable broth
2 large lemongrass, stalks (peeled and cut into pieces)
3 thai dried kaffir lime leaves
1 teaspoon vegetable oil
2 teaspoons minced garlic
1 teaspoon peeled minced fresh ginger
2 teaspoons roasted chili paste
1 1/2 cups chopped white mushrooms or 1 1/2 cups oyster mushrooms
2 tablespoons fresh lime juice
2 tablespoons soy sauce
3/4 cup finely chopped tomatoes
1 tablespoon minced cilantro
1 -3 small hot green chili pepper (seeded and halved)

Steps:

  • Medium saucepan, heat vegetable broth, lemon grass, chilis and lime leaves to a simmer.
  • In a small skillet over medium heat, add oil, garlic and ginger. Cook, stirring often for 30 seconds.
  • When broth has simmered about 5 minutes, remove lemon grass, chilis and leaves and discard them.

2 stalks lemongrass
2 thai red chili peppers, sliced
3 cloves garlic, minced
1 tablespoon galangal, minced
1 tablespoon refined coconut oil
5 cups vegetable broth
1 large tomato, diced
5 lime leaves
1 cup coconut milk
2 tablespoons soy sauce
7 oz extra firm tofu, cubed
6 oz cremini mushroom, sliced
¼ cup lime juice
1 tablespoon agave
salt, to taste
fresh cilantro leaf, for garnish

Steps:

  • Trim off the top third and very bottom of the lemongrass stalks. Using the side of a knife, press down across the stalks to bruise the lemongrass and release the oils. Chop each stalk into 4 pieces and set aside.
