Yield 4

Number Of Ingredients 11

6 hard-boiled eggs
3 scallions, finely chopped
3 tablespoons finely chopped parsley
4 tablespoons Greek yogurt
1 teaspoon Dijon mustard
1 - 2 tablespoons extra virgin Greek olive oil
½ tsp cumin, or more to taste
½ tsp curry powder, or more to taste
½ tsp cayenne or Greek boukovo (red pepper flakes), or more to taste
Salt and pepper to taste
4 mini pita pocket breads, halved and slit open

Steps:

  • Peel eggs and mash with a fork. Add the scallions, parsley, Greek yogurt, mustard, olive oil, cumin, curry, cayenne, mustard, salt, and pepper. Mash all together until very well combined. Add more yogurt or olive oil if you want it looser. Spoon equal amounts of the salad into each of the pita halves. Serve immediately with a green salad on the side.

Tips:

  • Use Fresh Ingredients: Always start with the freshest eggs, mayonnaise, and vegetables to ensure the best flavor and texture.
  • Hard-Boil Eggs Perfectly: For a creamy and tender egg salad, boil the eggs for exactly 10-12 minutes, depending on the size. Immediately transfer the eggs to an ice bath to stop the cooking process and prevent overcooking.
  • Chop Ingredients Evenly: Chop the eggs, celery, and onion into uniform pieces to ensure an even distribution of flavors and textures throughout the salad.
  • Use Good Quality Mayonnaise: Choose a mayonnaise that is made with simple, wholesome ingredients and has a smooth, creamy texture.
  • Add-Ins and Variations: Feel free to add other ingredients to your egg salad, such as chopped pickles, bell peppers, or fresh herbs, to create different flavor variations.
  • Make it Spicy: To give your egg salad a spicy kick, add a pinch of cayenne pepper, paprika, or sriracha sauce.
  • Chill Before Serving: Refrigerate the egg salad for at least 30 minutes before serving to allow the flavors to meld and develop.

Conclusion:

Spicy egg salad is a versatile and delicious dish that can be enjoyed as a sandwich, wrap, or salad. With its creamy texture, tangy flavor, and spicy kick, it's a perfect meal for any occasion. Experiment with different ingredients and variations to create your own unique egg salad recipe that will impress your family and friends.
