SPICY GARLIC GREEN BEANS

This is a great dish we have at a local chinese restaurant that I came home and played with. They're an excellent side dish. I store some thai peppers in oil that I use in place of the olive oil but regular olive oil is fine. This recipe is great if you cube up a chicken breast into 1/2" cubes and add it also.

Time 15m

Yield 4 servings

Number Of Ingredients 5

1/2 cup water
1 pound sliced green beans
2 tablespoons Asian sesame oil
2 clove garlic, minced
Red pepper flakes, to taste

Steps:

  • In a skillet, bring water and green beans to a simmer. Cook, uncovered until water evaporates. Drizzle in sesame oil and stir in garlic and red pepper flakes. Toss to coat and cook for 1 minute. Serve hot or cold.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes or bruises.
  • Trim the green beans: Remove the ends of the green beans, where the stem and blossom were attached.
  • Blanch the green beans: This will help them retain their bright green color and crisp texture. To blanch, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are tender-crisp. Immediately remove the green beans from the boiling water and place them in a bowl of ice water to stop the cooking process.
  • Make the garlic sauce: While the green beans are blanching, make the garlic sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, cornstarch, and water. Set aside.
  • Sauté the green beans: Heat a large skillet or wok over medium-high heat. Add the oil and swirl to coat the pan. Add the green beans and sauté for 3-4 minutes, or until they are heated through.
  • Add the garlic sauce: Add the garlic sauce to the skillet and stir to coat the green beans. Cook for an additional 1-2 minutes, or until the sauce has thickened.
  • Garnish with red pepper flakes: Sprinkle the green beans with red pepper flakes before serving.

Conclusion:

This spicy garlic green beans recipe is a quick and easy side dish that is perfect for any occasion. The green beans are blanched to retain their bright green color and crisp texture, and then sautéed in a flavorful garlic sauce. The result is a delicious and healthy dish that is sure to please everyone at the table.
