Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when you bend them. Avoid beans that are wilted, bruised, or have brown spots.
  • Trim the green beans: Remove the stem end and any tough strings from the beans. You can use a sharp knife or a kitchen shears to do this.
  • Blanch the green beans: This will help them retain their bright color and crisp texture. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are tender-crisp. Drain the beans and rinse them with cold water.
  • Make the masala paste: The masala paste is what gives the green beans their delicious flavor. To make the paste, combine the coriander seeds, cumin seeds, fenugreek seeds, turmeric powder, chili powder, and salt in a blender or spice grinder. Grind until the spices are finely ground. Add the ginger, garlic, and green chilies and blend until a smooth paste forms.
  • Cook the green beans: Heat the oil in a large skillet or wok over medium-high heat. Add the masala paste and cook for 1-2 minutes, or until fragrant. Add the green beans and cook for 5-7 minutes, or until they are heated through. Season with salt and pepper to taste.
  • Garnish with cilantro: Cilantro adds a fresh, citrusy flavor to the dish. Chop the cilantro and sprinkle it over the green beans before serving.

Conclusion:

Spicy green beans are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. They are a good source of vitamins, minerals, and fiber. The masala paste adds a delicious flavor to the beans, and the blanching process helps them retain their bright color and crisp texture.
