SPICY GRILLED TURKEY BURGERS
I'd never tried ground turkey meat before. I got curious when our small grocery store down the road got some in and I just had to try it. I came up with this recipe through a magazine I had that my (of all people) gastro doctor suggested. It's called EatingWell and it has healthy recipes. Some of them are frankly off the wall, but this one wasn't bad.

Steps:
- Preheat the grill.
- Mix together, but don't overmix, the burger ingredients and brush with oil.
- Place on the grill when hot and grill until the center is no longer pink.
- Place on warmed buns and top with any burger fixin's. I tried mayo and dill pickles and that was pretty good.
GRILLED TURKEY BURGERS WITH SWEET PICKLES & SPICY COLE SLAW
Sara Fosters "Casual Cooking" - what makes this book something of a gem, however, is the way Foster weaves her satchel full of recipes for dips, vinaigrettes, pasta sauces, purees - all fresh, herb-y and rather stunning , throughout most of the chapters! :)

Steps:
- Prepare a hot fire in a charcoal or gas grill. (Or just before you're ready to cook the burgers, heat a grill pan or cast-iron skillet over medium-high heat until hot.).
- Combine the turkey, bread crumbs, mayonnaise, chives, Worcestershire sauce, hot sauce, scallions, basil, salt, and pepper in a large bowl and work the mixture with your hands just to mix. (Do not overmix or the burgers will be tough.)
- Form the meat mixture into four 1-inch-thick patties.
- Season both sides of the patties with salt and pepper and grill them for 5 to 6 minutes per side, or until they're just done.
- Remove the patties to a platter, cover them loosely with foil to keep warm, and set them aside to rest for about 5 minutes.
- To assemble the burgers, lay a few pickle slices and one tomato slice on the bottom of each bun and place the burgers on top.
- Serve with mustard mayonnaise & the Spicy Cole Slaw, on the side.
- SPICY COLE SLAW.
- Combine the cabbage, arugula, and basil in a large bowl, and refrigerate.
- Whisk mayonnaise, vinegar, mustard, sugar, and red pepper flakes together in a small bowl.
- Just before serving, pour the dressing over cabbage, season to taste with salt and pepper, and toss gently to coat.

Tips:
- Choose the right ground turkey. Look for ground turkey that is at least 93% lean. This will help to ensure that your burgers are juicy and flavorful.
- Season the ground turkey well. Use a variety of spices and herbs to flavor the ground turkey. This will help to give your burgers a delicious and complex flavor.
- Don't overmix the ground turkey. Overmixing the ground turkey will make your burgers tough. Mix the ground turkey just until it is combined.
- Form the burgers into patties. Use a burger press or your hands to form the ground turkey into patties. Make sure the patties are about 1/2-inch thick and 3-4 inches in diameter.
- Chill the burgers before grilling. Chilling the burgers for at least 30 minutes before grilling will help them to hold their shape.
- Grill the burgers over medium heat. Grill the burgers for 5-7 minutes per side, or until they are cooked through. Be careful not to overcook the burgers, as this will make them dry.
- Serve the burgers on your favorite bun. Top the burgers with your favorite toppings, such as lettuce, tomato, cheese, and bacon.
Conclusion:
Spicy grilled turkey burgers are a delicious and healthy alternative to traditional beef burgers. They are easy to make and can be grilled in just a few minutes. By following these tips, you can make sure that your spicy grilled turkey burgers are juicy, flavorful, and cooked to perfection.
