1/2 cup canola oil
12 cups chopped peeled fresh tomatoes
4 garlic cloves, minced
3 bay leaves
4 teaspoons salt
2 teaspoons dried oregano
1-1/4 teaspoons pepper
1/2 teaspoon dried basil
2 cans (6 ounces each) tomato paste
1/3 cup packed brown sugar
Hot cooked pasta
Minced fresh basil, optional

Steps:

  • In a Dutch oven, saute onions in oil until tender. Add the tomatoes, garlic, bay leaves, salt, oregano, pepper and basil. Bring to a boil.   • Fill a 6-quart pasta pot three fourths full with salted water and bring to a boil for spaghetti. Mince garlic and halve tomatoes. 1 1/2 large green bell peppers, diced
1 large yellow onion, diced
1 (16 ounce) can sliced mushrooms
1 bunch green onion, diced
7 stalks celery, diced
1 1/2 teaspoons crushed garlic
2 tablespoons extra virgin olive oil
7 (10 ounce) cans diced tomatoes with green chilies
2 1/4 teaspoons Italian spices
2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1/2 teaspoon black pepper
1 1/2 teaspoons salt
30 ounces tomato paste
16 cups water

  • Saute yellow/green onions, celery, garlic, mushrooms, and bell pepper in olive oil until vegetables begin to soften.
