6 center-cut pork loin chops
1 medium onion, minced
3 -4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder

1/4 teaspoon cayenne
28 ounces can diced tomatoes with juice
2 cups frozen corn kernels
fresh ground black pepper

  • In large skillet, heat oil on high heat. Add chops and brown one one side (about 3-4 minutes), then turn. Remove to plate.

1 tablespoon brown sugar
2 tablespoons low sodium soy sauce
2 tablespoons chili paste with garlic (sambal oelek)
1 tablespoon hoisin sauce
2 teaspoons rice vinegar
1/4 cup diagonally sliced green onion
cooking spray

  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork, cooking 3 to 4 minutes on each side. Remove pan from heat and let pork stand for 30 seconds.
