Provided by Wendys Kitchen

Categories     Cauliflower

Time 50m

Yield 1 cauliflower

Number Of Ingredients 10

1 tablespoon vegetable oil
1 head cauliflower
1 1/2 cups plain Greek yogurt
1 lime, zested and juiced
2 tablespoons chili powder
1 tablespoon cumin
1 tablespoon garlic powder
1 teaspoon curry powder
2 teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 400° and lightly grease a small baking sheet with vegetable oil. Set aside.
  • Trim the base of the cauliflower to remove any green leaves and the woody stem.
  • In a medium bowl, combine the yogurt with the lime zest and juice, chile powder, cumin, garlic powder, curry powder, salt and pepper.
  • Dunk the cauliflower into the bowl and use a brush or your hands to smear the marinade evenly over its surface. (Excess marinade can be stored in the refrigerator in an airtight container for up to three days and used with meat, fish or other veggies.).
  • Place the cauliflower on the prepared baking sheet and roast until the surface is dry and lightly browned, 30 to 40 minutes. The marinade will make a crust on the surface of the cauliflower.
  • Let the cauliflower cool for 10 minutes before cutting it into wedges and serving alongside a big green salad.

Tips:

  • Choose a firm, fresh head of cauliflower for roasting. Avoid any heads with brown spots or blemishes.
  • Cut the cauliflower into florets of uniform size. This will help them roast evenly.
  • Toss the cauliflower florets with a mixture of olive oil, salt, pepper, and any desired spices. This will help them develop a nice roasted flavor.
  • Roast the cauliflower florets at a high temperature for a short amount of time. This will help them get crispy and caramelized without becoming mushy.
  • If you're using a nonstick baking sheet, you may not need to grease it. However, if you're using a regular baking sheet, be sure to grease it lightly to prevent the cauliflower from sticking.
  • Watch the cauliflower closely as it roasts. You don't want it to burn.
  • Once the cauliflower is roasted to your liking, remove it from the oven and let it cool slightly before serving.

Conclusion:

Spicy oven-roasted cauliflower is a delicious and healthy side dish that can be enjoyed on its own or as part of a larger meal. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy side dish, give this recipe a try!
