Kosher salt
1 tablespoon extra-virgin olive oil
8 ounces fresh chorizo, casings removed
12 ounces ground beef
1 bunch scallions (white and light green parts only), chopped
2 cups frozen corn (preferably fire-roasted)
1 poblano chile pepper, chopped
2 tablespoons tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Freshly ground pepper
1 14.5-ounce can diced tomatoes with green chiles
1 cup low-sodium chicken broth
1/2 cup sour cream
3 tablespoons unsalted butter
1 1/2 cups shredded pepper jack cheese (about 6 ounces)

Dollop the mashed potatoes on top of the meat mixture in the skillet, then spread with the back of a spoon. Transfer the skillet to the oven. Bake until bubbling around the edges and the topping is browned in spots, 25 to 30 minutes. Let rest 10 minutes, then sprinkle with the reserved scallions before serving.
