These Crock Pot Sausage and Peppers are so tasty and incredibly flavorful and simple to make. Italian sausage, peppers, onions and seasoning.

2 (19 oz) packages Johnsonville Italian Sweet Sausages
4 red peppers (sliced)
4 green peppers (sliced)
1 large onion (sliced)
salt and pepper (to taste)
1 tbsp Italian seasoning
1/2 tbsp garlic powder
1/4 cup tomato paste
1 cup water
hot dog buns (or cooked pasta, to serve)

Steps:

  • Slice up all the green peppers, red peppers and onions. This takes the most time in the preparation. The rest is a breeze!
  • Pop all of your sliced veggies into a wide (or oval) 4 to 6-quart slow cooker.
  • Season veggies with Italian seasoning, garlic powder along with salt and pepper.
  • In a bowl or measuring cup, whisk together tomato paste with 1 cup warm water.
  • Pour this tomato paste mixture over peppers and onion. Stir well. Cover and allow to cook on low for 4-6 hours (stirring occasionally).
  • When peppers and onions are soft and cooked, it's time to start grilling up those sausages! Place 5 Johnsonville Italian Sweet Sausages onto the grates of the Johnsonville Sizzling Sausage Grill.
  • Close lid and turn on the power button. Now, sit back and relax! The grill will do all the work! There is a thermometer inside the grill that will ensure the sausages reach the perfect temperature (about 10-15 minutes).
  • The grill will beep when sausages are ready! Continue with the second pack of Italian sweet sausages.
  • Place cooked sausages into your slow cooker along with the sausage and peppers. Sir it all around. Turn slow cooker on the warm setting and cover until ready to serve!

1 pound hot Italian sausages
2 green bell peppers, sliced
1 red bell pepper, sliced
1 large sweet onion (such as Vidalia®), sliced
1 (24 ounce) jar pasta sauce
1 (16 ounce) package elbow macaroni

Steps:

  • Place the sweet and hot sausages, green and red peppers, onion, and pasta sauce in a slow cooker. Add about 1/2 a jar of water. Cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still firm, about 8 minutes. Drain well.

Spicy sausage, pepper and onions. Takes very little prep time and is great for potlucks. Inexpensive and makes alot. Very delicious kids and adults both liked it is very filling. I first took it to a church game night that was just supposed to be snack food but knew I would want something a little more filling than chips had several requests for the recipe. Which made me have to think because when I first made it I used what I had in the house. This is what I remember using. I used Bar-S brand polish sausage which is just a cheap sausage a pack of 3 lbs is about $4 ( found in with the hot dogs in the refrigerated section lunch meats and stuff). Could be used as an entree ( just serve it on a whole bun) snack or starter for a party I think.

1 large green pepper, chopped (large dice)
1/2 cup frozen chopped red pepper (large dice)

2 pounds Italian hot and/or sweet sausages
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons fennel seed
1 red chile pepper, thinly sliced
2 cubanelle peppers, thinly sliced
1 red bell pepper, cored and thinly sliced
2 large red or yellow onions, thinly sliced
4 cloves garlic, thinly sliced
2 tablespoons tomato paste
1/2 cup dry white wine
1 cup chicken stock
1 (15-ounce) can tomato sauce or stewed tomatoes
A generous handful flat-leaf parsley, finely chopped
A loaf ciabatta bread*

Steps:

  • Place the sausages in a high-sided skillet or Dutch oven and add 1-inch water and 1 tablespoon extra-virgin olive oil to the pan. Bring the mixture to a boil, then reduce the heat a bit and allow the water to boil away. The sausages will gently cook through in the water, and then the oil will crisp the casings up to a deep brown. Remove the sausages to a plate.
  • Heat extra-virgin olive oil, a couple of turn of the pan, in the same skillet over medium-high heat, stir in fennel seed and chile pepper, then add in the peppers, onions, and garlic as you slice them, season with salt and pepper and cook 15 minutes to soften. Stir in the tomato paste 1 minute, then wine for 1 minute more. Add the chicken stock and canned tomatoes. Finish with parsley.
  • Slice the sausages on an angle and add to the pot. Cover, cool completely, and store for a make-head meal. Reheat, covered, over moderate heat or in moderate oven.
  • Crisp up chunks of bread in a warm oven just before serving for mopping up your plate!
