SPICY BEANLESS CHILI

My father came up with this recipe when I lived at home. He always added the optional cayenne pepper, and we four kids would mop up the chili with slices of bread. I don't use the cayenne for my family, but it still warms you up on cold days.

Tips:

  • Choose the Right Chiles: The type of chiles you use will greatly impact the flavor and heat level of your chili. For a milder chili, use poblano or Anaheim chiles. For a medium-heat chili, use cayenne or jalapeño chiles. And for a hot chili, use habanero or serrano chiles.
  • Roast the Chiles: Roasting the chiles before adding them to the chili enhances their flavor and smokiness. You can roast the chiles in the oven, on a grill, or over an open flame.
  • Use Fresh Ingredients: Fresh ingredients will give your chili the best flavor. If possible, use fresh tomatoes, onions, garlic, and cilantro.
  • Don't Overcrowd the Pot: When adding the ingredients to the pot, don't overcrowd it. This will prevent the chili from cooking evenly.
  • Simmer for Flavor: Let the chili simmer for at least 30 minutes, or up to 2 hours, to allow the flavors to meld and develop.
  • Season to Taste: Once the chili is done simmering, season it to taste with salt, pepper, and cumin. You can also add other spices, such as chili powder, paprika, or cayenne pepper, to taste.
  • Serve with Toppings: Serve the chili with a variety of toppings, such as shredded cheese, sour cream, avocado, and cilantro.

Conclusion:

This spicy smoking hot chili is a delicious and easy-to-make meal that is perfect for a cold winter day. The combination of roasted chiles, fresh ingredients, and flavorful spices creates a chili that is sure to please everyone at your table.
