⅓ cup red onion, minced
1 jalapeño pepper, minced
1 teaspoon salt
½ teaspoon black pepper

Steps:

1/4 teaspoon pepper
2 slices (1 1/2 oz.) fat-free Cheddar cheese, Monterey Jack cheese, or soy cheese, halved diagonally
3 tablespoons salsa

Steps:

  • 1. Broil chilis on foil-lined broiler pan for 10 to 14 minutes or until charred, turning once. Wrap in foil. Let stand for 5 minutes. Remove skin and seeds from chilis. Cut into strips.

1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)

Steps:

  • Chop your garlic and veggies.
  • Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
  • While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
  • Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. 4 teaspoons ground cumin
1 teaspoon chili powder
3/4 teaspoon garlic powder

With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

2 pounds ground turkey
2 large eggs, beaten
¼ cup diced yellow onion
¼ cup plain dry bread crumbs
4 tablespoons garlic-infused olive oil, divided
3 tablespoons seeded and diced fresh jalapeno peppers
2 tablespoons Worcestershire sauce
2 teaspoons prepared yellow mustard
1 teaspoon paprika
1 teaspoon chili powder

This is the best homemade burger I have ever eaten. We are not fans of garlic but we love Worcestershire sauce and we prefer flavor over health consciousness. By following this recipe you will get just a hint of garlic, mild spice, and a lot of Worcestershire flavor. If you like to really taste your garlic then you will need to add more. If you like spicy leave more seeds or increase the number of peppers and last but not least, if you are not a fan of Worcestershire sauce then cut back to 1 tbsp. If you want to be health conscious then use a lower fat meat but really watch your cooking time or it will be dry and lose a lot of flavor. In fact, if you go with sirloin or round I would suggest adding two pieces of white bread (crust removed) soaked in milk to your mix to retain moisture. My kids are VERY picky eaters and they love these burgers. (Take that McDonalds!)

1/2 cup mayonnaise
1 teaspoon cajun seasoning (Luzianne Cajun Seasoning)
1 tablespoon barbecue sauce (Sweet Baby Rays)
1/2 tablespoon butter
1/2 cup yellow onion, diced
1/2 garlic clove, minced
1 serrano pepper, most of the seeds removed and minced
1 1/2 lbs hamburger (70/30)
1 tablespoon cajun seasoning
1/4 cup Worcestershire sauce

  • Cajun Mayo:.
  • Prepare the Cajun mayo by combining the mayo, Cajun seasoning, and BBQ sauce and stir. Taste and adjust (like your grandma always told you), then set aside.
  • Pre-Heat Grill on High.
  • Burgers:.
  • Heat a small pan over medium high heat.
  • Add the pat of butter to the pan and melt.
  • Add the onions and sauté 2-3 minutes stir often.
  • Add the peppers and continue to sauté 1-2 minutes.
  • Add the garlic and sauté until fragrant.
  • Remove the onion, pepper, garlic mixture from heat allow to cool (Stick it in the freezer if your stomach is growling!).
  • Put the onion mixture into a large non-reactive bowl.
  • Tear the hamburger into small pieces and place in the same bowl.
  • Add the Worcestershire sauce.
  • Sprinkle 1/2 of the tbsp of Cajun seasoning over the meat and mix gently but thoroughly with your hands. (No pockets of seasoning please!).
  • Sprinkle the remaining Cajun seasoning and remix careful to not over work the meat.
  • Form into patties slightly larger than your buns.
  • Grilling:.
  • Place the burgers on the grill and listen to it sear the meat.
  • Reduce the heat to medium / medium high and continue cooking with the lid closed until the burgers are done to your liking flipping once.
  • Add the cheese shortly after the flip to get a really good melt (Important for thick slices of cheese).
  • Remember meat tastes better if not over cooked and the temperature will rise another 3-5 degrees after pulling the burgers from the grill. Cooking by temperature is the only way to get consistent results. I like to pull my burgers at 145-150 degrees.

I like to put these on toasted buns and top the burger with pepper jack cheese. To kick up the spiciness to the next level add 1/2 teaspoon cayenne. If you can find it, I highly recommend using smoked salt. It adds an awesome smoky flavor to these, I always use it.

1 1/4 lbs lean ground turkey
3 garlic cloves, very finely chopped
1/2 red onion, finely chopped
1/2 teaspoon dried thyme leaves
1/2 small roasted red pepper, about 4-5 strips, diced
1 teaspoon dried chipotle powder
1 teaspoon ground cumin
1 -2 teaspoon cayenne hot sauce, several drops (recommended Tabasco)

1/2 cup low-fat mayonnaise

Steps:

  • Chop your garlic and veggies.
  • Sauté garlic and onion in olive oil on low heat for 7-10 minutes until soft and very light golden brown.

  • Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with a little olive oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like. slather buns with Garlic Aioli.
  • If you want to decrease the heat use plain old chili powder instead of chipotle and cut it back to 1/2 teaspoon.

  • Mince garlic very fine, I like to sprinkle mine with salt and mash it but totally optional. Mix all ingredients together in small bowl, this will taste even better if it sits a while and will keep in the fridge for almost a week.
