Time 1h15m

Yield 4

Number Of Ingredients 13

1 cup all-purpose flour
2 tablespoons cornstarch
1 ¼ teaspoons onion powder
1 ¼ teaspoons garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
4 (4 ounce) beef cube steaks
2 tablespoons unsalted butter
2 tablespoons olive oil
3 very large sweet onions (such as Vidalia®), thinly sliced
2 cups beef stock
1 cup milk

Steps:

  • In a shallow bowl, stir together the flour, cornstarch, onion powder, garlic powder, salt, black pepper, and cayenne pepper until thoroughly mixed. Remove 1/3 cup of the flour mixture, and set aside. Gently press the cube steaks into the remaining flour mixture in the bowl until well coated on both sides.
  • Heat butter and olive oil in a large skillet over medium heat until the foam subsides on the butter. Gently pan-fry the steaks until the coating is browned, about 4 minutes per side. Turn only once. Remove the steaks to a platter.
  • Spread the onions out into the skillet with the remaining oil and butter, and cook over medium heat until the onions are translucent, 5 to 7 minutes, stirring often. Sprinkle the reserved flour mixture over the onions; cook and stir for 1 more minute, then pour in the beef stock and milk. Bring the mixture to a boil, stirring constantly until the gravy is thickened. Scrape the pan well to dissolve any flavor bits left in the bottom. Return the browned steaks to the gravy mixture, then push them down into the gravy. Cover the skillet, reduce heat to low, and simmer until the steaks are very tender, about 45 minutes, stirring occasionally.

1/4 cup honey
3 tablespoons fresh lime juice
1 teaspoon thyme leaves
6 cloves garlic, smashed
2 jalapenos, seeded
Kosher salt and freshly ground black pepper
1 1/2 pounds flank steak
2 red bell peppers, cut into 1-inch strips
2 yellow bell peppers, cut into 1-inch strips
2 large red onions, thickly sliced
3 tablespoons olive oil
2 limes, juiced
Kosher salt
Neutral oil, for oiling the grill grates
Warm tortillas, for serving
Suggested toppings: guacamole, sour cream, lime wedges, chopped cilantro, sliced jalapenos, pico de gallo, crumbled cotija cheese

Steps:

  • For the sweet and spicy marinade: Put the olive oil, cilantro, honey, lime juice, thyme, garlic, jalapenos, 1 teaspoon salt and 1 teaspoon pepper in a food processor and pulse to puree. Transfer the mixture to a nonreactive container, add the flank steak and toss to combine. Cover and refrigerate for at least 30 minutes and up to 2 hours before cooking
  • For the peppers and onions: Heat a cast-iron pan over medium-high heat until hot. Toss the peppers and onions in a bowl with the olive oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot pan and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
  • Prepare a grill for medium-high heat and brush the grill grates with oil.
  • Grill the flank steak until marked, 4 to 5 minutes per side for medium rare. Transfer to a cutting board and thinly slice.
  • Serve with the warm tortillas and toppings.

Tips:

  • Tenderize the Beef: Before cooking, use a meat mallet or tenderizing tool to break down the connective tissue in the cube steak, resulting in a more tender and flavorful final product.
  • Season Wisely: Generously season the cube steak with salt, pepper, and garlic powder to enhance its natural flavors. Additionally, consider using a flavorful marinade to infuse the meat with even more taste.
  • Brown the Beef: Sear the seasoned cube steak in a hot skillet with oil until it develops a nice golden-brown crust. This step adds color, flavor, and depth to the dish.
  • Caramelize the Onions: Cook the onions slowly over medium-low heat, allowing them to caramelize and develop a sweet and slightly smoky flavor. Patience is key to achieving perfectly caramelized onions.
  • Simmer in Sauce: Combine the browned cube steak and caramelized onions in a flavorful sauce made with Worcestershire sauce, soy sauce, brown sugar, and other spices. Simmer the mixture until the meat is tender and the sauce has thickened.
  • Serve with Sides: Accompany the spicy sweet cubed steak and onions with a variety of side dishes to create a complete meal. Consider mashed potatoes, steamed vegetables, or a crisp salad.
