SPICY CHICKEN BREASTS
This is a great skinless, chicken breast recipe that can be served over salad greens or as an entree! If serving over salad greens, cut chicken into strips and top with your favorite salsa or dressing.

Steps:
- In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).
- Preheat grill for medium-high heat. Rub some of the reserved 3 tablespoons of seasoning onto both sides of the chicken breasts.
- Lightly oil the grill grate. Place chicken on the grill, and cook for 6 to 8 minutes on each side, until juices run clear.

SPICY BASIL CHICKEN
An authentic taste of Thailand. Served best over white rice.

Steps:
- Heat the oil in a skillet over medium-high heat, and cook the garlic and chile peppers until golden brown. Mix in chicken and sugar, and season with garlic salt and pepper. Cook until chicken is no longer pink, but not done.
- Stir oyster sauce into the skillet. Mix in mushrooms and onions, and continue cooking until onions are tender and chicken juices run clear. Remove from heat, and mix in basil. Let sit 2 minutes before serving.

SPICY TAMIL CHICKEN
To make this a one-dish meal, add some vegetables of your choice. You could also add pineapple. If you don't like cilantro, leave it out, or if a whole bunch is too much for you, adjust amount to your taste. Ghee could be used in place of peanut oil.

Steps:
- Ina a dry skillet, cook red pepper flakes through turmeric, stirring, approximately 1 minute until aromatic.
- Add 2 Tbs oil to skillet, add onions and stir-fry about 4 minutes.
- Add 2 Tbs more oil, then add garlic through chicken plus half of chopped chilies.
- Stir-fry 8-10 minutes until chicken is golden.
- Add stock and 1½ c coconut milk.
- Bring to a boil, reduce heat& simmer 30-40 min until chicken is tender.
- Stir in lime juice.
- Add salt and rest of chopped green chili.
- Combine cornstarch with remaining coconut milk; stir into sauce.
- Increase heat and cook, stirring, until sauce thickens.
- Top with cilantro.
- Serve with rice.
