½ cup shortening
1 teaspoon vanilla extract
¾ cup honey
1 egg
1 cup all-purpose flour
⅛ teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup rolled oats
½ cup chopped pecans
½ cup grated zucchini
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large mixing bowl, cream together the shortening, vanilla, and honey. Beat in the egg until well blended. Combine the flour, baking soda, baking powder and salt; stir into the honey mixture. Stir in the rolled oats, zucchini, pecans and raisins. Drop by teaspoonfuls on greased cookie sheet, and flatten slightly using a fork.

½ teaspoon baking soda
1 ½ teaspoons ground cinnamon

⅔ cup packed brown sugar
1 egg

1 cup quick cooking oats
1 cup shredded zucchini
½ cup raisins

Steps:
