Time 6h45m

Yield 6 servings

Number Of Ingredients 14

3 pink lady apples, quartered, plus 1, thinly sliced, for garnish
3 granny smith apples, quartered
3 honeycrisp apples, quartered
3 gala apples, quartered
4 whole cinnamon sticks, toasted, plus more for garnish
1 tablespoon whole clove
3 whole allspice berries
2 whole nutmegs, halved
1 fresh ginger, peeled, 2 in (5 cm)
1 orange, peeled
10 cups water, as needed
1 cup dark brown sugar
bourbon, or whiskey, for serving
6 slices orange slice, for garnish

Steps:

  • Add the quartered Pink Lady, Granny Smith, Honeycrisp, and Gala apples, cinnamon, cloves, allspice, nutmeg, ginger, and orange peel to the Instant Pot. Pour in enough water to cover the apples. Sauté on high until simmering, 15-20 minutes. Cover with the lid and pressure cook on high for 6 hours. Once done, let the pressure release naturally before opening the lid.

Alternatively, to serve cold, transfer the cider to a covered pitcher or container and refrigerate until chilled. The cider will keep in the refrigerator for up to 5 days, or in the freezer for up to 3 months.

Tips:

  • Choose the right apples: Use a variety of apples that offer a balance of sweet, tart, and aromatic flavors. Some good options include Granny Smith, Honeycrisp, Pink Lady, and Braeburn.
  • Simmer, don't boil: Bring the cider to a simmer over medium-low heat. Boiling the cider will cause the alcohol to evaporate and the flavors to become muted.
  • Use whole spices: Whole spices, such as cinnamon sticks, star anise, and cloves, will infuse the cider with more flavor than ground spices.
  • Add citrus: A squeeze of orange or lemon juice can help to brighten the flavor of the cider.
  • Garnish with style: A cinnamon stick, a slice of orange, or a sprinkle of nutmeg can add a touch of elegance to your spiked apple cider.

Conclusion:

With its warm and inviting flavors, spiked apple cider is the perfect drink to enjoy on a chilly autumn or winter day. Whether you're hosting a holiday party or simply relaxing by the fire, this delicious beverage is sure to put you in the holiday spirit. So gather your ingredients, grab your favorite mug, and let's get started!
