CHICKEN AND SPINACH PASTA SALAD

Chicken and Spinach Pasta Salad image

My family loves pasta salads, but usually they have too much mayonnaise or oily dressing. Using hummus gives this dish a great taste and texture, while also increasing its nutritional profile. Adding chicken (store-bought rotisserie chicken works well), makes this pasta salad a complete meal. -Jenny Lynch, Rock Island, Illinois

Tips:

  • Prep your ingredients beforehand: Wash and chop the spinach, bell peppers, tomatoes, and onion. Cook the pasta according to the package instructions. Having everything ready will make the assembly process quicker and easier.
  • Use fresh, high-quality ingredients: The fresher the ingredients, the better the salad will taste. Look for vibrant, colorful vegetables and herbs. Avoid wilted or bruised produce.
  • Don't overcook the pasta: Al dente pasta has a slightly firm bite to it and will hold its shape better in the salad. Overcooked pasta will become mushy and absorb too much dressing.
  • Make your own dressing: A homemade dressing will give your salad a more flavorful and unique taste than a store-bought one. The recipe in this article provides a simple vinaigrette dressing that you can easily customize to your liking.
  • Let the salad chill before serving: This will allow the flavors to meld and develop. For the best results, chill the salad for at least 30 minutes before serving.

Conclusion:

Spinach and pasta salad is a refreshing, flavorful, and versatile dish that's perfect for any occasion. With its vibrant colors and delicious flavors, it's sure to be a hit at your next potluck, picnic, or party. So next time you're looking for a light and healthy meal, give this spinach and pasta salad a try. You won't be disappointed!
