YOGURT OR BUTTERMILK SOUP WITH SPINACH AND GRAINS
This is informed by my yogurt or buttermilk soup with wheat berries from a few weeks ago, but this time I stirred chopped steamed spinach into the refreshing mixture. It's a great soup to keep on hand as summer arrives. For a particularly irresistible version, add some diced avocado.

Tips:
- Use fresh spinach for the best flavor and texture. If using frozen spinach, thaw it completely and squeeze out any excess water before adding it to the soup.
- To make the soup creamier, use full-fat yogurt. You can also use Greek yogurt, but it will be slightly tangier.
- If you don't have any lemon juice on hand, you can use white vinegar instead. Just use half the amount of vinegar as you would lemon juice.
- Serve the soup immediately, or store it in the refrigerator for up to 3 days. You can also freeze the soup for up to 3 months.
Conclusion:
Spinach and yogurt soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover spinach. With its creamy texture and tangy flavor, this soup is sure to be a hit with the whole family.
