5 tablespoon butter
1/4 cup all purpose flour
4 large eggs, separated

2 cups (packed) grated smoked Gouda cheese (about 7 ounces)
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
