SPINACH LASAGNA ROLL-UPS
One night friends on a tight schedule stopped by. I invited them to stay for dinner, so I needed something I could fix in short order. Steps:
- In a medium skillet over moderate heat, saute mushrooms, chopped onions, and garlic in oil until mushrooms give off their juices and darken and onions are tender, about 7 or 8 minutes. Season with salt and pepper; the salt will help draw water out of the vegetables as they cook.
- Add dry chopped spinach to the pan and heat through for 1 minute. Adjust seasonings with salt, pepper, and a little nutmeg. Add ricotta and stir into mixture to heat cheese through, 1 minute longer. Remove pan from heat but leave in the warm skillet.
- Heat broth in a small pan over moderate heat. Melt Gorgonzola into broth and bring liquid to a bubble. Stir in cream and thicken sauce 2 minutes.
- Place cooked lasagna noodles on a large work surface or cutting board. Spread lasagna noodles with a layer of spinach-mushroom filling. Roll up pasta and arrange the 8 bundles in a shallow flameproof casserole dish. Pour warm sauce over roll-ups and top with mozzarella. Place casserole under broiler to melt cheese. Serve with Steamed Asparagus and Broiled Tomatoes.
- While you boil your lasagna noodles, place fresh asparagus tips in a small colander over the boiling water in the pasta pot. Place a lid on the colander and steam asparagus while you are cooking your pasta for 4 minutes or until tips are just tender.
- Split 4 vine-ripe tomatoes across the center and drizzle with extra-virgin olive oil, salt, and pepper. Broil tomatoes.
- Serve along side your completed casserole. Top with any fresh herb you have on hand: basil, thyme, or rosemary.

SPINACH LASAGNA ROLL-UPS
"Carnivores and vegetarians alike are seduced by this rich pasta entrée, which supplies a satisfying serving of vegetables in every portion." I have a series of recipes I got out of what I thought would be a useless magazine full of ho-hum recipes that I was given for free at the Check out stand at my local grocery store. The magazine is called "Dan's real food Spring 2008" Turns out, they are some of the best recipes I have ever come upon. This is one of those recipes.

Tips:
- Use fresh spinach: Fresh spinach leaves provide the best flavor and texture for this recipe. If using frozen spinach, thaw it completely and squeeze out as much excess water as possible before using.
- Don't overcook the spinach: Overcooking the spinach will make it tough and watery. Cook it just until it is wilted, about 1-2 minutes.
- Use a good quality lasagna noodle: The quality of the lasagna noodle can make a big difference in the final dish. Look for a noodle that is made with high-quality ingredients and that is cooked al dente.
- Don't overfill the lasagna roll-ups: Overfilling the lasagna roll-ups will make them difficult to roll and they may fall apart when baked. Fill them just enough so that the filling is evenly distributed.
- Bake the lasagna roll-ups until they are golden brown: Baking the lasagna roll-ups until they are golden brown will give them a nice crispy texture. Bake them for about 20 minutes, or until the cheese is melted and bubbly.
Conclusion:
Spinach lasagna roll-ups are a delicious and easy-to-make dish that is perfect for any occasion. They are a great way to use up leftover spinach, and they can be made ahead of time and frozen for later. Serve them with your favorite pasta sauce and a sprinkle of Parmesan cheese for a complete meal.
