SPINACH-PARMESAN PIE
This is one of the Impossible Pies from the 1960's. Some of them are so good, and easy, too. This pie makes its own crust as it bakes.

Melt butter in 10-inch skillet over medium heat. Cook onions and garlic in butter 2 to 3 minutes or until onions are tender. Stir in spinach; spread mixture in pie plate. Spread with cottage cheese.

Spinach Parmesan Recipe:
- Prep Time: 15 minutes
- Cook Time: 30 minutes
- Total Time: 45 minutes
- Servings: 6-8
- Difficulty: Moderate
- 1 package (10 ounces) fresh spinach, trimmed and coarsely chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup grated mozzarella cheese
- 1/2 cup ricotta cheese
- 1/4 cup grated Asiago cheese
- 1/2 cup grated Romano cheese
- 1/4 cup all-purpose Flour
- 4 large eggs, lightly beaten
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/2 cup grated Parmesan cheese
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated Asiago cheese
- In a large bowl, mix the spinach, 1/4 cup Parmesan, 1/2 cup mozzarella, ricotta, Asiago, Romano, and 1/4 cup Flour. Stir until well combined.
- In a separate bowl, whisk the eggs, milk, and butter until well blended.
- Pour the egg mixture over the spinach mixture and mix well.
- Pour the mixture into the prepared pie crust.
- In a small bowl, mix the bread crumbs, 1/2 cup Parmesan cheese, mozzarella, and Asiago. Spoon the mixture over the spinach mixture.
- Bake until the crust is golden brown and the center is set, about 30 minutes. Let the pie cool for 10 minutes before serving.
- Use fresh spinach for the best results. If you use frozen spinach, thaw it and squeeze out any excess water before using it.
- Use freshly grated cheeses for the best flavor. If you use pre-shredded cheese, it may not melt as well.
- Don't overcook the pie. The center should be set, but it should still be a little wobbly.
- Let the pie cool for 10 minutes before serving. This will allow the flavors to meld and the pie to set up.
